Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
This week I checked out the ad and decided on a delicious sandwich. This is what I call a dinner sandwich. It takes a little more effort than a lunchtime PB&J…but oh boy – is it ever worth it!
You guys know that I am not a mayo person but, I am not a fan of a bland dry sandwich either. That means I have to be creative and look for other spread options. This week my spread of choice was pesto!
My mom had given me a bunch of basil from her garden and I had a bunch from my organic produce delivery. I didn’t want it to go bad, so I decided to whip up a delicious batch of pesto. It is so easy to make pesto and it stores really well in the fridge or freezer.
I thought that I would share my recipe so you guys could whip up a batch. It is sure to make your next sandwich or pasta dish a family favorite.
My Turkey Pesto Flatbread Sandwich included my pesto, some Publix turkey, bacon, cheese, red onion, lettuce and tomato. I threw it on my panini maker and I won’t lie…I ate that whole sandwich that you see above. It was fantastic.
- 3 cups fresh basil
- 1 – 2 cloves garlic
- 2/3 cups olive oil
- 1/4 cup pine nuts or walnuts
- 1/2 cup parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Place basil, garlic and pine nuts in a food processor and pulse until chopped.
- Drizzle olive oil into mixture pulsing until smooth.
- Remove to bowl and add parmesan, salt & pepper, stirring until combined.
- Serve with your favorite pasta or as a spread.
- If not using immediately, store in an airtight container with a thin layer of olive oil on top of the pesto.

A Nova Scotia Reuben! It has turkey along w/ the corned beef/pastrami, swiss, saurkraut, and it has spicy mustard instead of Thousand Island dressing. Grilled, w/ a dill pickle spear. It is the best!

I love sandwiches with tons of veggies and humus. I did just do my publix run and bought things for a chicken salad sandwich. I did not realize publix carried good cooks tools. I will have to go check that out cuz i do like the good cooks items I have.

In summer, it’s a fresh tomato sandwich on white bread and in winter it’s a Reuben on rye – corned beef , sauerkraut, swiss cheese and thousand island dressing. Oh man, I could go for either one right now.

Green Goddess Grilled Cheese Sandwich
2 slices bread
2-3 tablespoons Pesto
2 slices mild white melty cheese like mozzarella
handful fresh baby spinach
¼ avocado, sliced
2 tablespoons goat cheese, crumbled
olive oil (and butter if you’re so inclined)
Directions
Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (2 tablespoons total, but if you’re sensitive, go light, the pesto is STRONG).
On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently.
Heat 1 tablespoon olive oil in a frying pan over medium low heat. (If you want to use butter, add it to the oil and let it melt). Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown.

My favorite sandwhich is a citrus turkey! It is on a multi grain ciabatta bread with fresh turkey. Then has a garlic aoli with a cranberry chutney. Also with roma tomatoes, baby greens and a gruyere cheese!!! YUMMY!!!!

I LOVE tuna, light mayo and chopped red onions with tomato (only if totally ripe), lettuce, and really grainy, seedy bread – not toasted. Yum!
