Potato Leek Soup with Bacon
I have to admit that I am not a big fan of cold weather, but the one thing I do look forward to during the chilly months is a bowl of warm soup. Today I thought I would share one of my favorites – Potato Leek Soup with Bacon. This is a delicious soup that is so easy to prepare. I promise even if you don’t consider yourself a pro in the kitchen…you can whip this one up very easily!

The combination of the potatoes, leek and bacon is just wonderful. I will admit that I can eat this whole pot of soup by myself! If you also enjoy leftovers, you might consider doubling this recipe so you’ll have plenty for your lunch throughout the week. You’ll thank me later. 😉 While this recipe is definitely a little heavy on the calories, it is really so delicious and worth a splurge on a cold day.

Potato Leek Soup With Bacon

Serves: 4 – 6
Ingredients
  • 1/2 pound Farmland Bacon
  • 2 leeks, trimmed, split, and washed thoroughly, then roughly chopped
  • 1 teaspoon butter
  • 4 Yukon Gold potatoes, peeled & diced
  • 3 cups chicken stock
  • water as needed
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Fry Farmland Bacon until crisp, reserving drippings.
  2. Set aside on a paper lined plate to drain.
  3. In a large dutch oven, saute leeks in butter and reserved bacon drippings over medium heat until translucent.
  4. Add potatoes and chicken stock to the pan. [i]If liquid does not cover the potatoes, add water to cover.[/i]
  5. Bring to a boil, then simmer, covered, for 40 minutes or until potatoes are tender.
  6. Using an immersion blender, blend soup until smooth (or blend in a blender in batches).
  7. Bring soup back to a simmer, then add heavy whipping cream, salt and pepper.
  8. Serve topped with the crumbled bacon.
  9. Serve warm.

Even if you don’t consider yourself a huge leek fan, I think you should try this recipe. You might just change your tune. If you just can’t do the leeks, try my Loaded Potato Soup instead.
