Egg Muffins with Sausage, Spinach & Mushrooms

What did you guys have for breakfast today?  You can see what I had and boy it was good! Over the weekend,  I made a big batch of Egg Muffins. I like having these as a hearty meal option, and they’re great because they only require a quick reheating.

I am a breakfast kind of gal but not really a morning person. This recipe is perfect because it’s a hearty meal with potatoes, eggs, and sausage all in one! Plus, you can make them ahead of time so that they are ready on those morning when you need breakfast in a hurry!

My favorite version is made with Farmland Homestyle Sausage, spinach and mushrooms. But there are really so many possibilities. Leave out the spinach and add onions. Or maybe you toss in peppers and tomatoes. Why not use crumbled Farmland Bacon instead of sausage. The options are endless! You can even build each muffin to order – perfect if you have picky eaters.

Egg Muffins With Farmland Homestyle Sausage, Spinach & Mushrooms

Serves: 12 muffins
Ingredients
  • 12 eggs, beaten
  • 3 cups of frozen hash brown potatoes
  • 6 Farmland Homestyle Sausage Patties
  • 1 cup cheddar cheese, shredded
  • 1 cup mushrooms, chopped
  • 1 cup spinach, chopped
  • salt and pepper to taste
  • cooking spray
Instructions
  1. Preheat oven to 375º F.
  2. Spray a muffin pan with cooking spray.
  3. Add 1/4 cup of hash browns into the bottom of each muffin cup.
  4. Place in the oven and bake for 15 minutes.
  5. While the potatoes are cooking, cook the Farmland Homestyle Sausage in a skillet and remove to a paper lined plate once done.
  6. Crumble the sausage once cooled.
  7. After 15 minutes, remove the muffin pan from the oven and assemble the egg cups.
  8. Evenly divide the crumbled sausage,mushrooms, spinach and cheese into each muffin tin.
  9. Pour the beaten eggs into the cups and season as desired.
  10. Cook in a 375º oven for 25 minutes (or until center is set).
  11. Once done, run a knife alone the inside of the muffin cup to release the egg cup.
  12. Serve warm.
Notes
[i]For hearty appetites, you can use a Texas muffin pan and the recipe yields 6 big muffins.[/i]
