Easy Cheez Crackers

Back to school means you need to be ready with lots of lunch box snacks. One of my boys’ all-time favorites are homemade Easy Cheezy Crackers. They are a knock off of a popular name-brand cracker, but you can make them for a fraction of the price, and they are crazy simple.

You only need five ingredients, all of which you probably have in your house right now! I can guarantee that the boxed cracker that your kids devour have way more than five ingredients. You’re curious aren’t you? Like the boxed cracker, these are crispy and cheesy, and I bet your kids will eat them by the handful.

ziploc cheez crackersThis recipe makes a big batch of crackers. I usually split the crackers into two portions. Half goes into a Ziploc® storage bag that the boys can munch on after school or on the weekends. The other half I go ahead and portion out into snack size Ziploc® bags so that I can quickly pack their lunch boxes each morning.

This recipe is super economical and the Ziploc® bags ensure that they stay fresh and delicious. Plus taking those few minutes to pre-portion them out for their lunches gives this busy mom a few extra minutes on hectic school mornings.

Easy Cheezy Crackers

Serves: 6 dozen cracker
Ingredients
  • 6 ounces sharp cheddar cheese
  • 1/2 stick unsalted COLD butter, cubed
  • 1/2 teaspoon Kosher salt + additional to sprinkle on top of crackers
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon ice water
  • 1/2 teaspoon cayenne pepper (optional)
Instructions
  1. Add all ingredients to your food processor and run for about a minute or until the dough forms.
  2. Remove the dough ball and divide in half.
  3. Form two discs and wrap each in plastic wrap.
  4. Refrigerate for about an hour.
  5. Roll the dough out on parchment paper or slipat to a 1/8″ thin 10×12 rectangle.
  6. Use a pastry wheel or pizza wheel to cut 1″ squares.
  7. Take a skewer or small pastry tip to poke a hole in the middle of the cracker.
  8. Sprinkle with Kosher salt.
  9. Return the cut crackers to the refrigerator for 30 – 45 minutes to allow the dough to firm up so the crackers can be easily moved.
  10. Preheat oven to 350º F.
  11. Once the dough is set, peel the crackers from the parchment paper/silpat and transfer to a baking sheet lined with parchment paper or a silpat leaving about 1/4 inch between each cracker.
  12. Bake for 14 – 15 minutes or until just golden.
  13. Remove to a wire rack to cool.
