Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
This week Publix has all the fixins for a traditional New Year’s Eve meal on sale. At my house we always do the traditional meal of collards with black-eyed peas and cornbread. My mom would always tell me the more I ate, the more money I’d see in the upcoming year. I am not sure about the money part but I have grown to love the tradition and have maintained it for all these years since I left home. Now, I just love the meal and look forward to it each New Year’s Day.
I’ll often do a deconstructed meal for my boys when I opt for a spicy dish. This one really doesn’t work for that so they will just get a PB&J instead. My husband loves them and they are really so easy since you let the crockpot do all of the work!
I know there is some debate on whether or not to soak beans but, it’s what I have always done and my beans turn out how I like them. If you are not a soaker you may have to adjust your temp and/or cook time.
- 1 pound bag dried Black Eye Peas
- 3 cups water
- 3 cups chicken broth
- 1 can Ro-tel Tomatoes with Green Chilis 10 oz (spicy is great)
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 jalapeño, chopped
- 1 hambone (or 5 slices of bacon)
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon cajun seasoning
- 1/2 teaspoon pepper
- Soak beans overnight then rinse.
- Add beans and all other ingredients to the crockpot and cook on low for 6 – 8 hours.
Grab your leftover Christmas ham bone and few sale items from Publix and you will be ready to whip up a delicious batch of beans.
