I just finished cleaning up dinner and it was so good that I thought I would share the recipe and suggest a little meal deal for you guys.
I had planned to do a cream cheese roasted chicken but when I looked into the fridge there was no cream cheese to be found!! But…I did have some Philadelphia Cooking Creme! I hosted a Philadelphia Cooking Creme House Party and everything I made was a HUGE hit. So I figured why not play around a bit.
Here is what I ending up doing…it was a huge hit!
Ingredients:
Whole Chicken
Philadelphia Cooking Creme (about 6 ounces) — can also use cream cheese
Salt & Pepper
Olive oil or your favorite vinaigrette dressingDirections
Preheat oven to 375 degrees.Gently lift the skin from the chicken carcass with your finger. You want the skin to stay intact on the bird! Don’t remove the skin just separate it from the bird trying not to rip it. I use a sweeping motion at the top of the breast then at the bottom. Repeat around the thigh. You can use a spoon if you would prefer but I find it easier to use my finger -easier to prevent rips.
Put the Cooking Creme in a pastry bag. I used Italian Cheese and Herb tonight. If you don’t have a pastry bag just use a ziploc and cut one corner. Pipe the cooking creme in between the skin and the chicken. Just push the skin to spread it evenly over the breast and around the thighs and legs.
Brush the chicken with a light layer of olive oil or vinaigrette. Then salt and pepper to taste.
Bake the chicken for about an hour or until done!
The chicken was so moist and had wonderful flavor. The best part is that this is a quick and inexpensive meal! The prep only takes about 5 minutes. I threw on some butter beans to simmer when I put the chicken in the oven and once I took the chicken out to cool, I quickly wilted some baby bok choy with ginger and garlic. My total time of active cooking was only about 10 minutes!!

I used the Santa Fe one tonight, it was yummy!! I cooked chicken in the crockpot with salsa and then shredded it. Then in a pot i added the shredded chicken and a tub of the Santa Fe one and cooked it till it was heated thru. Then in a skillet I heated up a tortilla and spread the chicken mixture and added some shredded cheese and folded it in half. It was SOOO yummy! Hubby loved it and he’s not a big Mexican fan.

I used the original cream tonight with chicken breast also! I first sauteed some mushrooms and removed them from the pan. Then I added some onion and then some chicken breast sliced into strips and cooked it until the chicken was done. Then I added the Philadelphia original cooking cream, some steamed broccoli (I used the Streamfresh pack that I had already steamed in the microwave). Then I added the mushrooms and the juice from half of a lime. I served it with the Vigo rice and it was delicious! My whole family (hubby & 4 kids) LOVED it. The best part? I got the Philly creams for 50 cents each with sales & coupons and the Vigo was BOGO AND I got the Steamfresh veggies for 28 cents each by stacking coupons!

I made the Chicken Primavera pasta just yesterday from the super easy recipe on the back of the tub. Used Buitoni Fettucini, Birds Eye vegetables and the Italian Herb cooking cream. Can’t wait to try other flavors!!

I used the Sante Fe to top ground beef enchiladas. It was awesome!
I used chicken for the enchilidas, and my husband didnt like the sauce. i hope the others are good. I thought it was ok, but i wonder if they are better with beef.

I made spinach stuffed mushrooms tonight with the italian one. I just mixed a frozen box of spinach (thawed and drained) with about 3/4 of a tub of the cooking creme and some carmelized onions. Filled the mushrooms and baked for 25 mins at 400. Yummy!

Thanks everybody since I have Cooking Cream Coming out my ears. There were coupon deals on it, then at my Kroger they were giving away two full sized samples last week free! Maybe Publix will do the same promotion!

I have a ton in my fridge. I had a $1.50 off target printable and the $1.50 manufacture’s for $1.50. They were on sale this week at our Publix for 2/$4. The cashier took the Q’s and said “wow we are paying you to take these home!” (the closest Publix to me does not accept Target as a competitor but one further out does, I generally shop at the one further away. This week I save just over $119!)

I also hosted a house party! I don’t know now how I ever did without these! I work for myself and usually start after dinner, hubby works for himself too until dinner. I used this to make Yummy! smothered steak. I breaded bottom round steak, I believe that was on sale at Publix last week, and fried it. (It was done with very little oil and very little flour.) In the crockpot, I used 3 beef bullion cubes, 1 cup water, some sage (hubby loves sage) an one container of cooking creme. OMGosh! This was the best tasting and super easy! It took 10 minutes to prepare, cooked for 8 hours and was gone in a matter of minutes. We will be trying other crockpot ideas since dinner always seems so rushed at our house.

Thanks for the chicken and phili cooking cream receipt – i’d tried it and it was good, the chicken was so moist – but it did take longer to cook, I just used my fingers to put the phili stufff under the skin and it worked great.
