Laurie over at Passionate Penny Pincher has just one recipe to share with you guys this week – Blackberry Cobbler.
I had to go check it out since I just made a blueberry cobbler last night! Hers is a bit healthier than mine (as if any cobber could be classified as healthy–tee hee!)
I figured while we were talking cobbler I would share my recipe…not exactly diet friendly but -oh so good!
Fruit Cobbler
Ingredients:
1 stick of butter
1 1/2 teaspoon baking powder
2 cups sugar (divided)
1 cup flour
3/4 cup milk
2 cups of fruit (cherries, blueberries, blackberries, peaches, anything you like –canned, fresh or frozen)
9 x 13 baking pan
Instructions
Preheat oven to 325 degrees
Melt your butter — I usually just pop mine in the pan and stick it in the oven while I am mixing up batter!
Place flour, baking powder and 1 cup of sugar in bowl
Add milk and mix until combined
Evenly distribute melted butter in pan
Pour batter over butter–DO NOT STIR!!!
Pour fruit over batter–DO NOT STIR!!
Sprinkle remaining 1 cup of sugar over fruit–DO NOT STIR!!
Pop in the oven for 45 minutes
Serve warm with ice cream–YUM!!

this is very similar to the cobbler I’ve made 4 times this summer already! My recipe (actually my Aunt Alma’s!) is: 1 stick butter / margarine, 1 cup self rising flour, 1 cup Splenda or sugar, & 1 cup fat free milk. Melt the butter in your dish, add enough berries to nearly fill 9 x 13 dish apx 5 cups. If using fresh or frozen berries sprinkle with a little sweetner. Mix and Pour in the flour / sweetner/ milk. with a spoon swirl a circle or figure 8 in the berry & batter mix. bake for 50 minutes at 350 degrees.

My mom calls this a “lazy day pie” it’s our go cobbler recipe, great with peaches, and Vanilla ice cream is a must with it. The best though, and I have made it with many varities of fruit, is Freah strawberries, I was leary of cooking strawberries, but it was awesome!
