Laurie over at Passionate Penny Pincher has several recipes ready for us this week. That Soup recipe has my name all over it! I am feeling a bit sluggish and could really use an easy meal today. I am thinking I might do a little menu modification tonight…I still have those Publix Tortilla Chips that were the penny item last week! 😀

i dont have a slow cooker is there a way to make this on a stove top?
Hi Marie! You could definitely make it on the stovetop – just put all ingredients except tortilla chips, cheese, and sour cream in pot on stove. Bring to slow simmer, then cook on low for 20 – 30 minutes (longer if you have time – just over low heat.) Hope that helps!
I tried the tortilla soup last night since I had left over chicken in the fridge and everything in my pantry & I thought it was delicious! Even my 3-yr old liked it! I had Cream of Chicken with mushrooms on hand (& have had it sitting around waiting for a purpose for a while) but in the end it really made no difference.
