Laurie over at Passionate Penny Pincher sent over her recipes for the week.
This week Laurie is focusing on easy meals for those busy weeknights. Laurie commented that she thought she would have time galore once her youngest started kindergarten. Contrary to her hopes, she has found that is not the case.
I have to admit that I had the same hopes. This year both of my boys leave at 7:30 and then are back home around 3:15. I imagined with them gone that long that I would be an organization machine, baking loaves of bread every day, cleaning room after room, empty laundry baskets…you get the idea. Instead, I am still constantly running around like a mad woman and never completing my to do lists.
I guess as parents, we will always have that dreaded to do list that is never ending. At least quick and easy recipes can give us a little breathing room.

Eating this as I type! I used the Purdue chicken that is on sale as a BOGO, and tried the recipe with the southwestern style. Instead of the brown rice, we are eating some chips and salsa. It is quite yummy, next time i may add a little chipotle sauce or peppers to kick it up a notch, lol. Thanks for sharing your recipe. **PS. the amount of flour needed is not on the recipe, so i added about 2-3 TBSP. 🙂

I have a question regarding the matchup coupon for Target on the $1 off 2 Market Pantry cheeses. I called my Publix(which does consider Target as a competitor) and asked them if they would take this coupon since they don’t carry that name brand(with it being Target’s store brand)and they initially said no. After mentioning that it was on here, they said they’d honor it, but are they supposed to? I don’t want some exception being made this time and count on it for future purchases and it not be the same. Thanks!
My guess is that it may vary by your store ~ my store does accept those as a competitor (I’ve specifically checked with our manager), but another store three miles down the road does not. It definitely depends on what your store choose to allow… not sure that that helps much though!
