Some of you guys may have already popped your turkey in the oven to get it ready for an early Thanksgiving dinner. With all the side dishes that usually accompany that big ol’ bird, there are usually quite a few leftovers.
Laurie over at Passionate Penny Pincher has come up with a few ideas on how to put those leftovers to good use.
Turkey sandwiches are not really a hit at my house so I always make a turkey tetrazzini with any of my leftovers. It is so simple and my guys love my casserole. It is a fantastic way to get a few more meals from that big bird. I actually try to make a huge casserole that can be used for dinner as well as lunch a day or so later!

I use leftover stuffing to make stuffed mushrooms. Stuff large mushroom caps with stuffing, top with a slice of your favorite cheese, and bake 350 degrees till mushrooms are cooked and cheese melted.
