Well guys I thought I’d try yet another new feature here on the site. I thought I’d show you how to take the Publix Super Deals and turn them into Publix Super Meals!
So many of you guys email and comment that you love the menu plan I share each week but want more meals that match up with the actual ad. So…I have decided that I’d try my hand a offering up a recipe each week using the sale items at Publix.
I am going to try to have the recipe serve 4 or more with a cost of $10 or less. It might take some creativity but I’m going to give it a shot 😀
This week I have a very easy and delicious recipe that is super versatile and can be served for breakfast, lunch or dinner! Check out my recipe for Hash Brown Egg Nests.
- 1 Package Hash Browns (Simply Potatoes or Hungry Jack)
- 2 Tbsp Olive Oil
- Salt & Pepper To Taste
- 6 Eggs
- 1/3 Cup Milk
- 1 Cup Cooked Sausage – crumbled
- 2 Tbsp Chopped Onions
- 2 Tbsp Chopped Bell Pepper
- 3 oz Chopped Mushrooms
- 1 Cup Shredded Cheese
- Mix hash browns, olive oil and salt & pepper in bowl until combined.
- Fill 12 muffin tins with the hash brown mix pushing the mixture down and to the sides of the tin to form a cup.
- Bake at 400 degrees for 20 minutes or until the edges start to turn a golden brown.
- Remove the cups from the oven and set aside.
- Mix the remaining ingredients in a bowl.
- Ladle the egg mixture into the pre-cooked hash brown cups.
- Return to the oven and cook an additional 20 minutes or until eggs are set.

-$0.50/1 Sargento Ultra Thin Slices 03/24/2013 SS Insert (exp 05/05/2013)
$1.50 per package (will need to be chopped for recipe)Eggs, $1.50
Onion – 50¢
Bell Pepper – $1
That means if you buy all the items you need (minus a few pantry staples) you can spend as little as $9.75! That’s only $1.63 per serving!
Another perk is that you will have plenty of leftover ingredients to use on other recipes making this dish even more economical.
I was able to pull all the ingredients from items I had on hand – meaning this was ZERO out of pocket for me! What’s great about this recipe is that you can customize it based on your preferences. Maybe use some of the super cheap ham from last week with broccoli and swiss. Try leftover grilled chicken with spinach and feta. The options are endless. Think about what you would like in an omelet and whip this one up.

Sounds yummy – great pictures! I wonder if they would freeze and warm up well for a quick weekday breakfast; what do you think?
Also, do you think this recipe would adapt well to an 8×8 or 9×9 baking dish to make one large casserole?

This sounds great. I cant wait to try it. I was thinking the same thing about possibly freezing for a quick weekday breakfast. Also was thinking this may make a good filling for a brakfast burrito.

I haven’t tried using the hash browns yet but I make a version of this without the hash browns almost every week then pop them in a ziplock & refrigerate them. They are great for a quick breakfast & do well in the fridge. I haven’t tried freezing them yet. Instead of mixing all the ingredients with the eggs I sprinkle them in the muffin cups (after using a generous amount of Pam) then pour the eggs over them. That way each one has the same amount of ingredients. I have used just about every mix of ingredients under the sun. We call them kitchen sink egg cups. My favorite so far is sausage, green onions and shredded cheese with a few red pepper flakes mixed in the eggs. Thanks for posting this. I can’t wait to try adding the hash browns. Sound wonderful, I have to fix breakfast for the teachers I work with soon and think I will try these. I am tired of the egg casserole that I usually do. I always brown my sausage in advance in bulk and freeze in pound packs to make stuff like this without the hassle of having to cook sausage.

I was wondering if I can substitute the hash brown for something else? I’m on a serious healthy diet and I can eat everything else in this recipe except for the hash browns. I was thinking about using sweet potatoes instead, but I know if it will taste kinda weird. Please give me ideas, because I’m in love with this recipe.
I would use grated Zucchini as a substitution…
Make sure you squeeze out as much moisture as possible so they will crisp up and not be soggy in the cups!!

I made these this morning using Mexican cheese blend, Hormel diced ham from last week’s sale and onion. We loved them. I wasn’t too sure about the hashbrown cups, but this turned out great! Thanks for sharing, Michelle!
