Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
I am sure there is no surprise that this week’s meal is Barbecue Chicken Pizza. With the Publix BOGO sale on pizza dough and boneless skinless chicken breast this recipe was a given! My husband and my boys LOVE pizza – big time! I can whip up a pizza dough in no time flat but with the sale I’ll grab a few dough balls myself. I included a pizza dough recipe if you feel like making yours from scratch.

- [b]PIzza Dough Ingredients[/b]
- 1 Cup + 2 Tablespoons of Water
- 2 Tablespoons of Oil
- 3 Cups of Bread Flour
- 1 Teaspoon of Salt
- 1 Tablespoons of Sugar
- 2¼ Teaspoons Active Dry Yeast[br]
- [b]Pizza Ingredients[/b]
- 2 cups shredded cooked chicken breast
- 1/2 cup red onion, sliced thin
- 1 cup barbecue sauce
- 2 cups mozzarella cheese, shredded
- cilantro for garnish
- Add the ingredients to your bread machine based on your machine recommendation.
- Set for the machine for the dough cycle.
- Once the cycle has finished, place the dough in an oiled bowl and cover with plastic wrap.
- Allow the dough to rise in a warm spot for around 30 minutes.
- Knead the dough and shape to form your pizza crust.
- Preheat oven to 400 degrees. [i]If using a pizza stone, place in oven to preheat.[/i]
- Place shaped pizza dough on lightly oiled pizza pan or peel (if you will transfer to a pizza stone)
- Spread 1/2 cup of barbecue sauce over pizza dough.
- Mix the remaining 1/2 cup of barbecue sauce with the shredded chicken.
- Spread the chicken evenly over the pizza and then top with the sliced onion.
- Sprinkle the cheese over the top of the chicken and onions.
- Place pan in oven (or transfer to pizza stone) and bake for 20 – 25 minutes until crust is brown and cheese is bubbly.
- Remove from oven and top with cilantro
