Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
This week I whipped up a delicious recipe that is super simple – Pretzel Crusted Pork Chops.
This is one of those recipes that takes less than 10 minutes to prep and then finishes in the oven. I always toss in a few sweet potatoes when I start the pork and they are done at the same time. Steam up a veggie and you have a great meal lickity split.
Now, I will tell you that the honey mustard dressing is the real star of this show. I have actually seen my husband take his finger and repeatedly sop up the sauce and then lick his finger…shhh – don’t tell him that I told on him 😉
Put the pork and pretzel that are on sale at Publix this week on your shopping list and give this one a try!
- 1/4 – 1/2 cup flour
- 1 cup panko breadcrumbs
- 1 cup pretzels
- 4 pork chops (approx 1 inch thick)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup honey
- 5 tablespoons dijon mustard
- 1 1/2 tablespoons apple cider vinegar
- 2 tablespoons olive oil, divided
- Preheat oven to 400 degrees
- Place pretzels in a food processor and pulse until coarsely ground. You will have a combination of crumbs the size of traditional breadcrumbs and those the size of panko breadcrumbs.
- Mix the pretzels with the panko and set aside in shallow bowl or plate.
- Place the flour in a separate shallow bowl or plate.
- Place honey, dijon, vinegar and 1 tablespoon of olive oil in a bowl and whisk until combined.
- Pour about half the dressing into a shallow bowl or plate and reserve the rest.
- Season pork with salt and pepper before dredging.
- First dip the pork into the flour, covering all surfaces. Shake off any excess.
- Next dredge the floured pork in the honey mustard dressing.
- Finally, dip the coated pork in the breadcrumb/pretzel mixture pressing the crumbs onto the pork.
- Heat the remaining tablespoon of oil in an ovenproof skillet over medium heat.
- Place the coated pork in the hot oil and cook on one side for 3 -5 minutes.
- Use a spatula to flip the pork and place into a preheated oven for 18 – 20 minutes (or until internal temp of 145 degrees).
- Remove from oven and serve with reserved honey mustard dressing.
