I had intended to share my recipe for Pizza Stuffed Chicken this week but by the time I had dinner done on Monday it was dark. My pictures just didn’t turn out, so I will have to share that recipe later. It’s a huge family favorite so I will try to get it done soon.
I had planned to make Chicken Satay last night but it was a dreary rainy day. I just didn’t feel like grilling so I moved my Dirty Rice up a day and thought I’d share it instead. This is a very economical meal and can be put together in about 30 minutes (less if you have cooked rice on hand!)
Now I know when some of you look at the ingredients you are going to turn up your noses at this recipe. The traditional version of this recipe calls for chicken liver (or giblets). Now, you can make my recipe below leaving out the liver but I promise you it adds a fabulous flavor to the rice – a richness that the sausage alone just doesn’t offer. The liver is so tiny that I bet your family would never even guess it was in the rice.
I typically save the liver from roasting chickens/turkey and make up a big batch of dirty rice. You can also find tubs of frozen liver at Publix if you don’t happen to have any on hand – it’s super cheap! You can also adjust the spice based on your family’s preference. I typically pull out a couple of servings for the boys then kick it up with additional cajun seasoning and sometimes cayenne pepper.
- 1 1/2 cups rice
- 3 cups chicken broth
- 1 teaspoon vegetable or canola oil
- 1 pound sausage (hot is great in this recipe)
- 1/2 pound chicken liver, minced
- 1 onion, chopped fine
- 1 bell pepper, chopped fine
- 1 large celery stalk, chopped fine
- 2 cloves garlic, chopped fine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon cajun seasoning (more if desired)
- Bring chicken broth to a boil and add rice.
- Reduce heat and simmer for 20 minutes or until tender. Set aside.
- Heat oil in a large skillet.
- Add liver and sausage and cook until browned, about 6 -8 minutes.
- Add onion, bell pepper, celery, garlic, salt, pepper and cajun seasoning to pan.
- Cook until vegetables are tender, about 5 minutes.
- Fold in cooked rice into the vegetable/meat mixture.
There are some Publix sale items that will make this one a great deal. Add these items to your list and whip up a big batch of Dirty Rice without breaking the bank.

This looks delicious. I’ve never cooked with chicken livers before..but this recipie make me want to give it a try if i can get over the ewww factor 🙂

I love sausage (breakfast) I love chicken livers (someone else poking them) but when I showed my husband this recipe, he asked me to make this for the Ole Miss game tomorrow.. ROLL TIDE!!

Why can I NOT Find your chopped chicken liver in the deli Dept in Clearwater, Fla. like I do now in Asheville, NC in the their new store ?? It was in the deli Dept near the egg salad or special case near the deli dept. Please let me know why you might have discontinued this item?? I LOVE IT!!
