Creamy Caprese Pasta With Asparagus and Grilled Chicken

With the sale on Mueller’s Pasta I thought I would share a family favorite that is really easy and oh so good – Creamy Caprese Pasta With Asparagus and Grilled Chicken.

Ok so it is a crazy long name and at my house we call it Twisty Pasta with Orange Sauce. I figured I had to give it a fancy name for you guys -tee hee. Honestly, it really doesn’t matter what you call it…it’s just good. This is my favorite pasta sauce ever and it’s so easy to make. Throw in some asparagus, grilled chicken, basil and fresh mozzarella and voila…dinner. Not a lot of effort for a ton of flavor.

Creamy Caprese Pasta With Asparagus and Grilled Chicken

Ingredients
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 can diced tomatoes [i](I like the italian blend)[/i]
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon parsley
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup parmesan, grated or shaved
  • 1 tablespoon butter
  • 8 – 10 oz cooked pasta (corkscrew is great in this recipe)
  • 1/2 pound cooked asparagus, cut into bite sized pieces
  • 8 oz chicken breast, grilled and sliced
  • fresh basil
  • 4 oz fresh mozzarella, chopped into bite size pieces
Instructions
  1. Saute onion and garlic in a saucepan over medium heat just until onion is translucent.
  2. Add tomatoes, dried spices, sugar and salt and simmer for about 5 minutes.
  3. Add heavy cream, butter and parmesan and continue to simmer for 5 minutes.
  4. Remove sauce to blender and pulse until smooth.
  5. Toss sauce with cooked pasta, asparagus, mozzarella, grilled chicken.
  6. Top with fresh basil.
Notes
[i]Tip – for perfectly cooked asparagus. Wash and break off woody stems. Drop asparagus into salted boiling water and cook 2 minutes. Remove to an ice bath. Perfectly cooked and delicious![/i]
