The weather is starting to cool off a bit and boy oh boy I am craving some comfort foods. When I looked through the ad this week, nothing was jumping out at me. Then I noticed the sale on potatoes and I instantly thought…Loaded Potato Soup!
This is a super easy recipe and only a slight variation of the one I ate all the time as a little girl. Potato soup night was one of my all time favorite meals. I adjusted my mom’s recipe by adding chicken broth.While my mom uses only milk in her recipe, I like the richness that half and half adds to the soup. To really kick this one up, serve it in a bread bowl – your family will come running!
By the way…with just a few modifications you have a rocking Broccoli Cheese soup too. I will have to share that one another day!
- 3 cups potatoes, peeled and diced
- 1 3/4 cups chicken broth
- 1 3/4 cups water
- 1/4 cup celery, sliced
- 1/2 cup onion, chopped
- 1/4 cup carrot, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 5 tablespoons butter
- 5 tablespoons flour
- 1 cup milk
- 1 cup half & half
- Farmland bacon, cooked crisp and crumbled
- green onions, sliced
- cheddar cheese, grated
- sour cream
- Place potatoes, carrots, onion, celery, water and chicken broth in a large pot. Bring to a boil then cook over medium high heat for 10 – 15 minutes…just until potatoes are fork tender.
- Melt butter in a separate sauce pan.
- Whisk flour into melted butter and cook 2 minutes.
- Slowly whisk milk and half and half into the roux.
- Continue cooking about 5 minutes until the sauce is thickened.
- Pour the sauce into the pot with the potatoes and other vegetables.
- Add salt and pepper and stir until combined.
- Cook the soup for 5 minutes then serve topped with cheese, Farmland bacon crumbles, green onions and sour cream (if desired).
Grab a few items from the Publix sale and pair that with some pantry items and you can whip up a fantastic soup. This is a very economical meal that your family will love!
