shimp-tostadas

Shrimp is one of my go to foods when I need to whip up dinner in a pinch. It’s quick and so versatile…plus my guys will devour it no matter which recipe I make.

I have to admit I am a bit jealous of all you Florida folks. I would love to be able to have fresh shrimp and seafood so readily available. Being surrounded on three sides by water sure comes in handy for seafood lovers!

I recently whipped up my Grilled Lime Shrimp Tostadas and was looking at the Fresh from Florida site and found a yummy recipe for Florida Peanut Noodles With Wild Shrimp. That one is definitely going on my menu soon – pasta, peanut butter and shrimp are all family favorites here at my house.

Here’s my Grilled Lime Shrimp Tostadas recipe. It only takes 15 minutes to whip up. Give it a try and let me know what you think.

Ingredients
  • Skewers (if wooden soak in water for 20 minutes)
  • 1 lb shrimp, shelled and deveined
  • ¼ cup olive oil
  • 1 lime, juiced
  • 2 garlic cloves, minced
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅛ teaspoon red pepper flakes (more if desired)
  • ¼ cup cilantro
  • refried beans
  • lettuce, shredded
  • tomatoes, chopped
  • queso fresco
  • guacamole or any other favorite topping such as black olives, onions, salsa, etc…
Instructions
  1. Place olive oil, salt, pepper, cumin, red pepper flakes, garlic and cilantro into a bowl and blend with a stick blender until emulsified. (You can also use a regular blender)
  2. Pour over shrimp and refrigerate for 5 – 10 minutes.
  3. Skewer shrimp and grill on high for 2 -3 minutes.
  4. Brush with extra marinade then flip and grill an additional 2 – 3 minutes until shrimp is pink and cooked through. Remove from grill.
  5. Assemble your tostada by spreading with beans, lettuce, tomato, cilantro and topped with the grilled shrimp. Squeeze extra lime juice on top before serving.
