Well this week I saw the olive BOGO and knew that I wanted to whip up some Picadillo! With the holiday craziness, I am all for dinner options that are quick and easy. So instead of doing the recipe on the stove, I decided to throw everything in the crockpot. I do this with my pasta sauce so I figured that the Picadillo would work too. It turned out great and took very little effort.
This is a perfect weeknight meal and great comfort food on a chilly day. As you can see the ingredient list is pretty small so you can whip this one up without breaking the budget. Try my Easy Crockpot Picadillo and let me know what you think.
- 2 pounds lean ground beef
- 1 medium onion, diced
- 2 – 3 cloves garlic, mincced
- 1 large bell pepper, diced
- 8 oz can tomato sauce
- 1/3 cup chopped manzanilla pimento stuffed olives, chopped
- 2 tablespoons olive brine
- 2 tablespoons ketchup
- 1 tablespoon red wine vinegar
- 1 tablespoon cumin
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1/4 cup cilantro, chopped (+ extra for garnish)
- Brown ground beef in a large skillet.
- Drain any excess fat.
- Add onion, bell pepper and garlic then cook 2 – 3 minutes until vegetables begin to soften.
- Transfer mixture to crockpot and add the remaining ingredients then mix to combine.
- Cook on low for 4 – 6 hours.
- Check and season with more salt if needed and serve over steamed rice topped with chopped cilantro.

I’ve never seen it with cilantro…use oregano instead and add a handful of raisins a few minutes before serving. Wonderful…learned it from my Cuban Grandmother In Law years ago.

This recipe is similar to mine. I don’t use raisins either. My mother in law does, but I don’t like it like that. I may give this one a try just to see how it compares to mine. Might be better.
Do you serve it on rice or pasta? I’m not sure what to do with it after it is made. I’d love to try it.
