I have a treat for you guys today- a recipe that is so simple and absolutely delicious! My Cajun Chicken Alfredo is one of my guys’ all time favorite meals. I won’t lie, I could eat an entire pot of this stuff by myself. I listed the servings on this recipe as 4 – 6 but at my house this one only serves 4 – there’s never any leftovers!
I call this a one pot wonder. Everything cooks in just one pot so you can put together dinner quickly and have almost no clean up. Like the other meals on our menu plan this week, this one is incredibly easy. I promise that all of you can whip this one up in under 30 minutes.

- 1 tablespoon olive oil
- 8 – 10 oz boneless skinless chicken breast, cut into 1/2 inch cubes
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup cream
- 8 oz ziti noodles (or your favorite pasta)
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon cajun seasoning
- 3 oz parmesan cheese, grated
- Add the olive oil to a large skillet and cook the chicken 3 -5 minutes until browned.
- Add the garlic and cook for until fragrant, about 1 minute.
- Add chicken broth, cream, noodles, salt, pepper and cajun seasoning.
- Bring to a boil, cover and reduce heat.
- Simmer for 15 minutes until pasta is al dente.
- Stir in parmesan cheese and serve.

Sounds really good! I bet if you wanted a thicker sauce, you could swap out the cream for a block of cream cheese. Might cling to the pasta more.
Yes you sure could! I might cook the pasta first then add it to the sauce. I may try that next–good idea!

How about a jar of Alfredo sauce. I do it all the time. It’s usually cheaper, and convenient, just open the pantry.

This was simply delicious. Besides tasting wonderful and being quick to prepare, I loved that everything was cooked all in one pot, so just one thing to clean up! One of my new favorites!
