There are some great perks to living in the South. One perk is that we have pretty nice weather that allows for foods that others can only dream about.
Being in and near Florida means that there is access to some phenomenal fresh seasonal produce. In February, when everyone is in the country is suffering through snowstorms and freezing temperatures, we are able to brag about STRAWBERRY SEASON! Florida folks are able to celebrate with the world famous Florida Strawberry Festival in February and early March!
Those deliciously sweet little fruits are definitely something to celebrate. Everyone at my house love strawberries…especially my boys. No matter if I serve them plain or in a recipe, they are sure to clean their plates. Next time you shop, pick up some Fresh From Florida strawberries and whip up a Florida Strawberry Parfait. You might want to make extras as these will disappear in no time flat.
INGREDIENTS
- 2 cups fresh Florida strawberries, rinsed, hulled and sliced
- 8 ounces low fat cream cheese, whipped
- 2 tablespoons natural Florida sugar
- 1/2 cup low fat vanilla yogurt
- 4 graham crackers, crushed
- 1 lemon, juiced
- 4 sprigs fresh mint for garnish
DIRECTIONS
- In a medium sized mixing bowl, combine whipped cream cheese, sugar and lemon juice.
- Fold the yogurt into the cream cheese mixture.
- In four wide mouth glasses, evenly layer cream cheese mixture, strawberries and crushed graham crackers.
- Garnish with sprigs of fresh mint.
- Serve chilled
Besides being super simple, this is a healthy recipe that you’ll feel good serving your family. This is a much a better option than a calorie laden, heavy dessert. Plus, there’s no baking required. You can grab a big carton of Fresh From Florida strawberries plus a few pantry staples and you can assemble this in no time flat.
