My husband loves casseroles. Just throw everything in one pot and he is a happy guy! This recipe came about in my attempt to do a scalloped potato. My Cheesy Ham & Potato Casserole is a thick and creamy version of scalloped potatoes with the addition of ham and peas. It’s quite tasty!
I make a cheese sauce then pour it between layers of thinly sliced potatoes. It’s a very hearty recipe that is the ultimate comfort food casserole.
This one works best if you have a mandolin to cut those potatoes thin. If you cut them by hand you might have to adjust your cooking time to make sure your potatoes have time to cook in the oven.
Be sure and check out the other recipes I’ve shared so far for the Publix Menu Plan (Week Of 3/27 – 4/3):

Sounds wonderful! I want to make this! What kind of mustard and how much in step 3?
No mustard…sorry copied that from my mac & cheese recipe. I use the same cheese sauce–YUM!

I definitely recommend par-cooking the potatoes first, otherwise I have found it takes forever for them to get soft! This is also great to make after Easter dinner, when you have a ton of leftover ham and probably already have everything else in the house. Yum yum!
I just wanted to say that I LOVE this new feature! I never comment, but I just wanted to share my thanks for doing this. I’m sure I’m not the only one that uses this but just doesn’t comment 🙂 thanks again!
Thank You so much. You are very kind to share all your hard work for so many of us that need help when it comes to cooking, preparing or planning and/or all of the above.
