I almost forgot to post the final recipe for our Publix Menu Plan. This last one is a HUGE family favorite – Chicken Cordon Bleu Roll Ups.
While these make look difficult to prepare, they are actually super simple. Just flatten your chicken, top with ham & cheese then roll it up. A quick dip in an egg wash then a roll in Panko finishes the prep. They bake in the oven and come out super moist and oh so delicious. I make an easy mustard sauce that goes with it, but my boys like their chicken without it. Check out the full recipe over on my other site – I Heart Kitchen.
To make it a full meal, just steam some green beans and whip up some easy Hasselback potatoes* and you have a meal that won’t break the bank.

That Chicken Cordon Bleu looks so good. I will be making this over the weekend. Got everything I need already. Thank you for providing such simple but tasteful recipes. I made the pork tenderloin recipe – the one where you turn the oven on high and then cook for a short amount of time, then turn the oven off and leave the tenderloin in the oven. It turned out so moist and flavorful. That is one of my “go to” recipes. Thanks Michelle. : )
