Earlier this week I shared my recipe for Slow Cooker Corned Beef and Cabbage. I always grab a big 3 – 4 pound roast just so I will have leftovers to whip up my husband’s favorite – Classic Reuben Sandwiches.
Thanks to the sales this week at Publix this meal is easy on the budget. St. Patrick’s Day is next week and this would be a perfect recipe to whip up. My boys are not big fans so they just do a grilled cheese but my husband happily has these for dinner then for his lunch the following day.
Pair this with roasted potatoes and you have a meal for four that’s under $1.60 per person!
Here are the other recipes I have shared as part of our Publix menu plan for the week starting 3/13 (3/12 for some)
- Slow Cooker Corned Beef and Cabbage
- Black Bean Quesadillas (Easy & Delicious!)
- Peanut Butter Thai Noodles With Pork
- 1 pound corned beef, sliced
- 1/2 loaf marble rye bread
- 1 cup sauerkraut
- 1/4 cup thousand island dressing
- 1/4 pound Swiss cheese, thinly sliced
- butter or cooking spray
- Create your sandwich by first spreading dressing on one side of the bread.
- Next add a slice of swiss and 1/4 pound of corned beef.
- Top the beef with a good helping of sauerkraut and then add another slice of cheese.
- Spread more dressing on the bread and place dressing side down to complete the sandwich.
- Continue this method to create all sandwiches.
- Heat your griddle or heavy pan and lightly coat with butter or cooking spray.
- Cook the sandwiches for about 3 -5 minutes until golden brown.
- Flip and cook the other side until golden.
- Enjoy!

- Publix Thousand Island Dressing – 1¢ (penny item coupon)
- (2) Kraft Chunk Cheese, 7 or 8 oz, BOGO $3.99 = $3 ($1/2 from 3/9 Insert)
- Petite Red Potatoes, 3 lb bag, $2.99 (already purchased for earlier recipe)
Total = $6.30
You will have extra groceries to use on future meals – Extra bread, sauerkraut, dressing and lots of cheese!
Looks great! I don’t care for corned beef so I use turkey or roast beef, still delicious! For a cold twist, use all the same ingredients but switch out coleslaw for sauerkraut and don’t grill. Worked in a deli in Philly in my teens/early 20’s, super popular sandwiches. 🙂
