Here’s the next recipe in our Publix menu plan for the week starting 3/13 (3/12 for some) – Peanut Butter Thai Noodles With Pork. This is a very easy recipe to put together. My guys love spaghetti but you can only do basic spaghetti so many times. This recipe is a great way to shake up spaghetti night. Everyone loves peanut butter at my house so I can serve this and know everyone will clean their plates.
It only takes a few minutes to whip up your meat marinade. I do it before carpool. When we are about ready to eat I start the grill, the pasta and sauce all at the same time. By the time the noodles are done, so is everything else. Then it’s just a matter of serving it up.
Keep this recipe in mind next time you pull out that box of spaghetti. I think your whole family will enjoy the change of pace.

Slow Cooker Corned Beef and Cabbage
Black Bean Quesadillas (Easy & Delicious!)

- 1/4 cup soy sauce
- 1 tablespoons sesame oil
- 1 teaspoon rice wine vinegar
- 1 tablespoon fresh lime juice
- 1/2 teaspoon hot chili oil
- 1 clove garlic, minced
- 1 teaspoons fresh ginger, grated or minced
- 1 tablespoon brown sugar, packed
- 2 tablespoons cilantro, chopped
- 1 pound fresh pork chops

- [u]Noodle Ingredients[/u]
- 8 oz spaghetti noodles, cooked according to package instructions
- 1 tablespoon ginger, grated or minced
- 1/2 cup creamy peanut butter
- 1/2 cup water
- 1/4 cup soy sauce
- 1 – 2 tablespoons lime juce[i] (basically I use a whole lime between the pork marinade & the sauce)[/i]
- 2 tablespoons brown sugar, packed
- 2 teaspoons chili paste
- 1 teaspoon sesame oil
- 1/2 cup peanuts, chopped
- cilantro & green onions for garnish
- In a bowl (or zip top bag), combine soy sauce, sesame oil, vinegar, lime juice, oil, garlic, ginger, brown sugar and cilantro.
- Mix well.
- Add pork and toss to coat.
- Cover bowl/close bag and allow to marinade in the refrigerator for at least 1 hour.
- After 1 hour, remove pork and discard marinade.
- Grill pork for 3 – 5 minutes per side (depending on thickness) or until cooked through.
- Allow to rest for 5 – 10 minutes before slicing.
- Combine ginger, peanut butter, water, soy sauce, brown sugar, lime juice, chili paste and sesame oil in a medium microwave safe bowl and mix slightly.
- Place bowl in microwave and cook for 45 seconds.
- Remove and stir.
- Place bowl back in microwave and cook an additional 30 seconds.
- Remove and stir until combined…repeat if necessary.
- Immediately toss noodles in sauce, add grilled pork and top with chopped peanuts.
- Garnish with sliced green onions and cilantro.
