It has been such a crazy week this week and it’s just not going to get better as I am having a little 4th of July get together on Friday. That means I will be trying to get my house cleaned and everything organized before my guests arrive. Plus, I need to find some time to shop too.
I didn’t want you guys to think I was skipping out on the menu this week.

I have already shared a couple of the recipes and today I am going to share my Black Bean Tortilla Pie recipe. Whenever you need a recipe that is quick, simple and very hearty – this one is perfect.
While there’s no meat in this one –you won’t notice at all…my guys don’t!
- 4 large flour tortillas
- 1 can black beans, rinsed and drained
- ½ jalapeño, seeded and minced
- 1 cup frozen corn
- 1 – 2 cloves garlic, minced
- 1/2 cup red onion, chopped
- 1/2 cup chicken broth
- 2 green onions, sliced
- 1 -2 tomatoes, chopped
- ¼ – 1/2 cup cilantro, chopped
- 2 cups shredded cheese (we like Monterrey Jack)
- 1 tablespoon chili powder
- 1½ teaspoon cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon paprika
- cooking spray
- In a saute pan, add beans, garlic, red onion, jalapeño, corn, chicken broth, chili powder, cumin, onion powder, garlic powder, paprika and salt.
- Cook on medium heat until most of the liquid is absorbed.
- Place one tortilla in the bottom of a springform pan that has been sprayed with cooking spray.
- Add about a cup of the beans mixture then top with 1/2 cup of cheese, about a tablespoon of tomatoes,a tablespoon of cilantro and a tablespoon of green onion.
- Add another tortilla and repeat the layers twice, ending with a tortilla.
- Bake in a 375º F oven for 15 minutes.
- Top with the remaining cheese and bake for an additional 5 minutes.
- Top with the remaining green onion and tomatoes.
- Serve with guacamole, sour cream, etc.
