It’s hard to believe…but summer is almost over. Soon the kiddos will all be headed back to school. Part of me is happy as I will get a little free time but then I will also miss having my boys at home hanging out with me.
I have told you guys before…I am not a morning person! It typically takes me a little bit of time to get going after I wake up. I know those first few weeks of school I will be moving at a snail’s pace. Of course my guys will need a good breakfast so you better believe I will looking to quick and easy breakfast options.
My boys have never liked cereal so they get a hot breakfast every day. One of their favorite things to eat are eggs. I also love eggs – both the taste and the ease of preparation. My oldest would eat a boiled egg every day if he could and my little one is a scrambled egg kind of guy. One of my favorite things to make them for breakfast is Baked Egg In A Nest. I do love the stovetop version…but again, I am not always on my game in the morning. So this baked version allows me to prep, pop them in the oven and just turn on the timer. I can put them together when I wake and by the time they are up and dressed there is a hot and delicious breakfast waiting for them at the table!
- 4 slices bread
- 4 tablespoons butter, softened
- 4 Safest Choice™ Pasteurized Eggs
- salt & pepper to taste
- cheese, tomatoes, green onions or your preferred toppings
- Preheat oven to 375º F
- Lightly butter both sides of the bread
- Push the bread into a ramekin or muffin cup.
- Crack a Safest Choice™ Pasteurized Egg into the center of the bread.
- Sprinkle with salt and pepper to taste.
- Bake in a 375º oven for 15 – 20 minutes (cook time will depend on how you prefer your eggs – 17 minutes gives you a slightly runny yellow)
I love this recipe because it gives my boys the protein their little bodies need plus I can make these in my sleep. You can make as little as one or enough to feed a whole army! My boys like their eggs where they are just set so I typically bake them for about 17 minutes. This way they get a set white and a slightly runny yellow. These would be fantastic for homemade Caesar salad dressing. In the past, I would have to coddle my egg before using it to make the dressing to make sure I eliminated the risk of salmonella. The dressing always comes out better with raw egg.

When I was growing up, my Mom would always make fried eggs sunny side up, with runny white and yellow and sprinkled with just salt and pepper and we’d dip our bread in it. So simple but so yummy (only Mom’s taste that good! lol). I would like to also make that for my kids but with the threat of salmonella, I’ve avoided doing so. I didn’t know Safest Choice eggs were safe from that.

Breakfast is the biggest challenge around my house. Husband leaves at 6:30, and daughter leaves at 7:30. Although this will change when she starts nursing school in coulple of weeks and has to be there at 6:30 and we live 30 mins away. I’m looking for something I can bake ahead and she can stick in the microwave and eat on the go. I’m planning to try a few things this weekend to see how they turn out. Such as a scrambled egg with sausage, and cheese rolled in a whole wheat shell. (why does the mom have to be the one to get up so early and cook for everyone)

I would make my husbands favorite things. His favorite food in all the world is chocolate chip cookie dough. He actually wanted a tub of it for the grooms “cake” when we got married. I refused on the grounds that I did not want a mass case of salmonella on my hands as that would be a perfectly DREADFUL wedding memory!
BUT!!! With these eggs I’d have only one worry- how much weight he’d gain eating an entire batch of cookie dough!!! 😉 he’d be so thrilled!!
The other thing he LOVES is sunny side up eggs. He likes to actually slurp the yolk. Sends chills up my spine every time he asks for them. But again, this would take away the worry. I wonder if there’s a way to take away the ick factor? I’m not at ALL into runny eggs. YUCK!

I would make my egg soufflé. I use 20 eggs for this ! My family loves this for breakfast, lunch and dinner! I have used these eggs in it and it makes it fabulous! I would also use the eggs for boiled eggs for egg salad for lunches. There is endless recipes for to use these delicious eggs!

I actually just made a Frittata this morning with my Safest Choice™ eggs. Added mushrooms, onions, bacon pieces and jalapeno peppers to an iron skillet and cooked it all right in the oven. Simple, delicious and fast!

I have struggled with fibromyalgia for many years. Working out with weights has helped me quite a bit. I was inspired by 77 year old world class body builder, Ernestine Shepherd. She says one of her secrets is a raw egg protein drink and she goes through quite a few on a daily basis. I couldn’t afford to do this on my own. I was afraid to try this with regular store bought eggs. With Safest Choice Eggs I would gladly add this to my routine.

I love having an egg for breakfast too. So I scramble one egg with a little bit of milk in a coffee cup that has been sprayed with olive oil and microwave it for 35 seconds. It’s a quick and healthy way to get some extra protein in a fluffy and yummy egg : )
These eggs are DELISH! Bought them for the first time this week at Publix, and I’m hooked! The make great scrambles and Hash. AMAZING French toast! I can’t wait to use them in baking! Cakes and cookies from scratch will be outstanding with these eggs!

A yummy southwest omelette! I love to put zucchini, red peppers, onions, and lots of cheese. My husband who hates vegetables loves us for breakfast! With eggs that good you don’t even taste the vegetables!

We make Alien Eggs. I cut crescent roll dough into strips and crisscross them in the bottom of a muffin tin, allowing a little to hang over the sides. I scramble eggs and pour them in the dough cups and add whatever I have, cheese, sausage, mushrooms. Cook until done. They’re really ugly, hence the name Alien Eggs, but very tasty!

I like to use leftover biscuits from the night prior to make egg and cheese sandwiches in the microwave (because I’m too lazy to cook on the stovetop and dirty a pan in the morning.) It’s hard to keep the eggs from drying out, so I will feel much more comfortable undercooking them just a bit if I know that I’m not risking a salmonella problem.

So many things to make, especially with the holidays right around the corner. One of our favorite egg ‘indulgences’ is to pick up a loaf of Sourdough from Cracker Barrel and to make Eggs in nest…so yummy!!

My mother makes this amazing breakfast casserole (she calls it “wedding casserole”) and it’s delicious! It is honestly the one breakfast that we’ve made that every single person loved- even the ones who didn’t like eggs. I would make that every week if I could! It’s an awesome recipe. Eggs, cheese, bread chunks or unseasoned croutons, bacon pieces, and sometimes tomatoes or bell peppers for a little bit of veggie. It’s delicious!

We love making omlettes…my kids love putting all the toppings in and helping out.
Every time my boys invite me over for a get together they always request I bring my deviled eggs! I do a trio of stuffed eggs: standard deviled eggs, spinach deviled eggs and seafood deviled eggs.
So far with ours we make breakfast sandwiches for dinner and we also used them to batter deer steaks for dinner last night. So good!

In the summertime when it is hot, I like to make egg salad. You can eat it either in a small or half sandwich or stuffed in a tomotoe on a bed of lettuce. It is cool and refreshing, but not heavy.
I would use the eggs to make my kids the Egg In A Nest breakfast. They look super easy and super fun!

I have three boys. My oldest two love eggs. Just last week we found out that our youngest has outgrown his egg allergy. HOORAY!!! So I years supply of Davidsons eggs would be so well received at our house!
Easy! My favorite squash casserole has four eggs in it! Add a lot of potato salads with six to ten eggs, and a lot of breakfast, and we easily go through a dozen a week. Oops. Forgot the develled eggs!

I would make Chocolate Silk Pie!! I have a recipe that calls for raw eggs which always makes me nervous. I usually end up making it with an egg substitute just for that reason. I just found out about these eggs. I have no idea how I ever missed them or even looked into the possibility of a safe egg but I didn’t try them until I had a coupon :o) Sad thing is that I am a baker! I eat boiled eggs for breakfast daily due to the need for protein and the fact that I love them. I have so many recipes that I use eggs in so the possibilities are endless… deviled eggs, egg salad, potato salad, bacon & eggs, egg sandwiches, cakes, pies, souffles.. oh the bubba gump list goes on and on. In the end though my favorite will be that Chocolate Silk Pie!!
