Florida Orange Cupcakes

With the holidays coming up, I’ll be doubling (maybe even tripling) my egg use, so this coupon couldn’t come at a better time! There’s deviled eggs, pies, dressing, baked mac & cheese and so much more. Plus, eggs are the perfect choice for breakfast. The protein in eggs provides steady and sustained energy that starts your day off right. I can say for sure that a FREE carton of eggs is right up my alley. I will happily put those babies to good use!

Orange juice is another must-have at my house. Besides being delicious, one 8-ounce serving of orange juice is fat-free and, at 110 calories per 8-ounce glass, has fewer calories than some other commonly consumed 100% fruit juices. It’s also a great way to start the day!

Eggs and OJ are staples at my house and I bet they are at your house, too. I use eggs multiple times per week and orange juice is my drink of choice in the morning. But did you know that they pair perfectly in many different recipes that go beyond breakfast?

I shared a delicious recipe for Florida Orange Brownies last week and this week I thought I’d give you another idea to put that high value coupon to use. The recipe I am sharing today is a good one – Florida Orange Cupcakes!

If you have never tried your hand at homemade cupcakes, you have to whip these up. These reminded me of my grandma’s homemade cupcakes. They were light and fluffy, topped with the most incredible orange cream cheese frosting…YUM. I’ll go ahead and admit that I licked the bowl. Florida Orange Cupcakes

Serves: 24 cupcakes
Ingredients
  • [u]Cream Cheese Icing[/u]
  • ½ cup heavy cream, chilled
  • 8 ounces cream cheese, at room temperature
  • 4 tablespoons unsalted butter, at room temperature
  • ½ cup pure maple syrup, pure
  • 1 teaspoon Florida orange zest, chopped .
  • 1 teaspoon vanilla extract
  • [u]Florida Orange Cupcakes[/u]
  • 5 large eggs
  • 1 cup sugar
  • 2 tablespoons Florida orange juice
  • 2 tablespoons water
  • 1 tablespoon orange zest, chopped
  • ½ teaspoon ground nutmeg
  • 2 cups cake flour
  • Orange zest, for garnish
  • Cupcake liners
Instructions
[u]Icing Instructions[/u]
  1. Whip heavy cream to stiff peaks; reserve.
  2. Combine cream cheese, butter, maple syrup, orange zest and vanilla extract in mixing bowl; beat with mixer until combined.
  3. Fold in whipped cream; refrigerate until chilled.
  4. When ready to use, mix gently by hand until soft.
[u]Florida Orange Cupcakes Instructions[/u]
  1. Combine eggs and sugar in metal mixing bowl.
  2. Rest bowl over pot of lightly simmering hot water.
  3. Whisk with wire whisk until eggs become warm, frothy and light in color.
  4. Place egg mixture in mixing bowl; beat with whisk attachment of mixer on medium speed.
  5. Add orange juice and water; whisk for 15 minutes, until mixture is cooled.
  6. Add orange zest and nutmeg.
  7. Gently fold in flour with a rubber spatula until just combined; batter will be slightly lumpy, do not overmix.
  8. Preheat oven to 325° F.
  9. Place cupcake liners in cupcake pans; fill three-fourths full with batter.
  10. Bake for 10 to 15 minutes, until cooked through and lightly browned on top. Toothpick inserted in center will come out clean.
  11. Remove cupcakes from pan; cool on wire rack completely.
  12. Just before serving, place Cream Cheese Icing in pastry bag; pipe icing on top of cupcakes and garnish with orange zest.
  13. Serve immediately.
