best meals happen at homeWith the holidays and the boys home from school, life has been crazy. Now that things are settling down, it’s time to get back in my routine.

With the big holiday meals, my everyday cooking has suffered a bit. Dinners over the past few weeks have often been sandwiches, quick salads and should I admit that I have even just had cereal for dinner a few times?!

My life is so much easier when I have a meal plan in place. Next week I will get back on track and start sharing ideas with you guys to help you put those Publix sales to use. Slow Cooked Southwestern Pork Roast
I thought I’d share one of the quick and easy meals that I made – Slow Cooked Southwestern Pork Roast. It took me maybe 5 minutes to pop it in my slow cooker and then I just let it cook all day.  My guys devoured this and clean up was a breeze!

Slow Cooked Southwestern Pork Roast

Serves: 4 – 6
Ingredients
  • 2 1/2 lbs boneless pork roast
  • 1 package Lipton Recipe Secrets Onion Soup Mix
  • 1 can Campbell’s Bean with Bacon Soup
  • 1 can (15 oz) Le Sueur Very Young Small Sweet Peas
  • 1 can Ro*Tel Original Diced Tomatoes & Green Chilies
  • 3 tablespoons firmly packed brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
Instructions
  1. Arrange pork in slow cooker
  2. Combine remaining ingredients and pour over pork
  3. Cook covered on low 8 – 10 hours or high 4 – 6 hours or until pork is tender.
  4. Serve if desired with hot cooked noodles or rice.
