Ok…so cooking is not generally the highlight of my day. Sometimes it feels like a never ending chore. I always joke that one day I am going to go on strike and my guys aren’t going to know what to do. In all honesty, dinner time is a very important part of my day. During the week, it’s the only time all of us sit down and eat together. This is the time when we catch up on the day and actually have a conversation. It’s the only way I can keep up with everything that’s going on with my guys. So while I might complain, I really do love being able to put a good meal on the table each night.

I do a lot of chicken. It’s quick, easy and I know that my guys will eat it with no complaints. Plus, you can add what you want to get a completely different taste—all with the same meat! I thought I would share one of my guys all time favorite recipes – Parmesan Crusted Chicken. I think you’ll love it as well as it’s super simple and cooks up very quickly. You only have about 5 minutes of active prep then toss it in the oven. As you can see, I cooked up some orzo, roasted some cherry tomatoes and steamed asparagus while the chicken was cooking and dinner was on the table in less than 30 minutes from start to finish. A perfect weeknight meal.
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl.
- Arrange chicken on baking sheet.
- Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
- Bake until chicken is thoroughly cooked, about 20 minutes.
