I don’t think it’s a secret that I have a house full of meatball loving guys. I think you guys also know that I am a bit of a Sabra Hummus addict. I eat it on just about anything…I have been known to just spread it on a lettuce leaf and roll it up as a little mid-afternoon snack. Yes…it’s delicious–give it a try!!
Naturally when the folks at Sabra asked me to come up with a recipe, what do you think I came up with? Something that appealed to everyone in my house – Chipotle Chicken Meatballs!
It took me a couple of attempts to get it right. Let me tell you that final batch came out just perfectly. These are not your everyday boring meatballs. They are packed with flavor yet still quick and easy to prepare. Plus, they are crazy versatile. You can use them in a pasta dish, toss them on a hoagie with or even serve them as a yummy appetizer. One batch makes a ton of meatballs and your whole family will love them.
Now, I started out trying to make them super healthy so at first, I used ground chicken breast. The texture just wasn’t working for me. Honestly guys, these are meatballs and you really need a little bit of fat so just get regular ground chicken not ground chicken breast or your meatballs will be too dry! Ground chicken is still lower in fat and calories than many of your other proteins so this is still a better for you recipe.
Another tip that will help you is to pull out your trusty cookie scoop. Not only does this speed up the meatball making process but you get meatballs that are all the same size so they’ll cook evenly. Just scoop out all your meatballs with your scoop and then wet your hands to give your meatballs that final shaping. Wet hands are the key…the meat won’t stick and you’ll be able to round them perfectly!

I’ll give you a reminder to grab your coupons but I wanted to give you a chance to check out the recipe so you could plan your menu.
- 1 pound ground chicken
- 1/2 cup Sabra Chipotle Hummus
- 1/2 cup panko bread crumbs
- 1 egg
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Preheat oven to 375º F.
- Add all ingredients to a large bowl and mix well until combined.
- Form into 1/2 inch meatballs using a cookie scoop.
- Wet your hands and roll each meatball around a few times to give the final round shape.
- Spray a rack with cooking spray and place on a cookie sheet [i](you can also cook directly on a sheet pan sprayed with cooking spray)[/i]
- Place each meatball on the rack and bake at 375º F for about 20 minutes or until cooked through.
- Serve with your favorite pasta, on a hoagie or with more Sabra hummus for dipping!

This looks great but how do you make what is in the photo. I see a slice of tomato and a slice of cucumber or is that a pickle and there is what looks like hummus spread on maybe a bread round? Help?!? Susie
… these looked fantastic so i went out on a limb and decided to try something new… but i made mine a little differently because my store didnt have chipotle hummus, so i used roasted red pepper hummus, and i had a $1 off any pork coupon… so i used pork instead of chicken. I also added a little garlic salt… and i can officially say… THEY WERE DELICIOUS! and soft, and filling, and we will definitely be making them again… especially since we paired this with the BOGO Alexia products.. making our entire dinner less than $5! 🙂

i also think these would be perfect to make ahead and use for lunches.
