I have the easiest and most delicious recipe to share with you guys. All four of us had to visit the dentist today and it ran a little longer than I expected. I ran home to get dinner ready while Jim finished up with the boys. I had very little time to get everyone fed before it was time to head out again to take Jeb to football practice.
I noticed some frozen grilled chicken and a bag of the Birdseye Protein Blends Southwest Style and in about 10 minutes I had the most delicious burritos on the table.
You can customize the burritos however you like but the key is the Birds Eye Protein Blends. The Southwest Style is a blend of whole gains, black beans, corn, lentils, red bell pepper and sauce. I didn’t have to add any spices at all! My boys gobbled them up and had no clue that they were eating healthy! It was a hearty meal and took maybe 10 minutes from start to finish.
I know we had some great sales recently and you guys probably have a bunch in your freezer so you might want to think outside the box. While they are great sides, they are fantastic meal starters too!
If you don’t have them in your freezer, you might want to grab a few. These will come in handy for your busy weeknights. Need another recipe idea? Try the California Pasta Salad Recipe…it’s also quick and easy and perfect for a weeknight meal!
- 1 bag Birds Eye Protein Blends Southwest Style, cooked according to package instructions
- 1 cup cooked chicken, shredded
- 4 – 6 tortillas, warmed
- 1 cup cheese, shredded
- sour cream
- guacamole
- lettuce
- tomatoes
- salsa
- Place a little of the Birds Eye veggies, chicken, cheese and any additional toppings in the middle of each warmed tortilla and wrap tightly.
- Serve with additional sour cream, guacamole and salsa.
Don’t forget about the new Birds Eye Flavor Full varieties. They are new at Publix and they are super tasty too. They make fantastic sides and are done in just minutes too!
This post is brought to you by the folks at Birds Eye. All comments and opinions are my own.
I was fully prepared to dislike these even though I picked up a few for free a while back (we do NOT like the voila meals) but these are fantastic as meal starters.
I was tentative too, but I have enjoyed the two I tried. Not wild that there’s so much salt (or spice), but it’s an easy side dish. I’ll have to try combining them with something like Michelle did to make a full meal.
Ditto on not liking the Voila meals!
