SPINACH SALAD WITH PORTOBELLO MUSHROOMS

We eat a lot of salads at my house. They are quick, easy and very versatile…not to mention healthy! All that combined makes them a winning combination for me! Now, I know what you are thinking…salads are dull and boring. WRONG! You can whip up some fantastic dinner salads that will have your taste buds buzzing yet still keep your kitchen time to a minimum.

I thought I would share one of my all time favorite recipes – Spinach Salad With Portabello Mushrooms. I could probably eat this salad three times per week. There’s something about the sweetness of the roasted veggies with the fresh greens and that delicious Wish-Bone dressing that is fantastic. My mouth is watering just thinking about it! I do a very simple rub on my chicken and grill it up – dinner is on the table in under 30 minutes!

You really have to try this recipe. It’s a great for a busy weeknight and your whole family will love it. You’ll love the fact that your total total cooking time is limited to roasting some veggies and grilling up some chicken.

Spinach Salad With Portabello Mushrooms Recipe

Ingredients
  • 3 medium onions, cut into 1/2-inch wedges
  • 1/2 cup Wish-Bone® Italian Dressing [or Wish-Bone® House Italian Dressing]
  • 4 large portobello mushroom caps
  • 1 package (10 oz./300 g) fresh spinach leaves [or baby spinach], trimmed, rinsed and patted dry
  • 2 boneless, skinless chicken thighs [or chicken breasts] (about 8 oz.), grilled or broiled and sliced (optional)
Instructions
  1. Preheat oven to 450°.
  2. Toss onions with 2 tablespoons Wish-Bone® Italian Dressing on broiler pan without rack. Add mushrooms in single layer. Roast 25 minutes or until vegetables are tender. Slice mushrooms and toss with 2 tablespoons Dressing; set aside.
  3. Just before serving, toss spinach with remaining 1/4 cup Dressing. Arrange spinach on serving platter, then top with mushrooms, onions and chicken. Sprinkle, if desired, with grated Parmesan cheese.
