‘Tis the season for parties and all sorts of fun get togethers. When coming up with a menu, I find that the best option are small items that folks can grab and snack on without using any utensils. They are easier to handle and you have less mess to clean up at the end of the night!
I thought I’d share one of my favorite party appetizers that’s always a hit – Sausage & Cheese Grits Bites. This is the perfect little bite size morsel that covers all the important things in an appetizer. You get both creamy and crunch in the homemade grits cake. That’s topped with a delicious cheesy sausage topping that’s perfectly seasoned thanks to the Farmland Homestyle Sausage. The tomatoes and green onion add that little extra flavor that makes these little gems fabulous. Plus, I think the red and green make them the perfect addition to a holiday spread.
Whenever I make these, they are always one of the first items to disappear. Luckily my recipe makes a big batch so you’ll be able to keep filling your tray throughout the night as needed!

- [u]Grits Cakes[/u]
- 4 cups milk
- 3 cups chicken broth
- 1 teaspoon salt
- 2 cups instant grits
- 1/2 cup cheddar cheese, shredded
- 4 tablespoons butter
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 – 2 teaspoons of oil
- [u]Sausage Topping[/u]
- 12 oz package Farmland Homestyle Sausage
- 4 oz cream cheese, softened
- 1/2 cup cheddar cheese, shredded
- 3 green onions, thinly sliced + additional for garnish
- 1 tomato, diced
- Cook the milk, chicken broth and salt in a heavy pan on medium high until it begins to boil.
- Whisk in the grits and decrease the heat to low.
- Cook for 5 – 7 minutes until the liquid has been absorbed, stirring occasionally to avoid lumps.
- Add cheese, butter and black pepper and taste and adjust seasoning as needed.
- Line a large 18-x13-inch baking sheet with parchment paper or a Silpat.
- Pour the grits into the pan and smooth until even.
- Allow to cool slightly then cover and refrigerate until completely chilled and firm (I let sit overnight.)
- Use a 2″ round cookie cutter to cut each grits cake from the pan.
- Place on a cutting board until needed.
- Heat 1 teaspoon of oil in a large skillet and cook the grits cake about 6 – 8 minutes per side until golden brown. (do in batches as needed)
- Drain on a paper lined plate.
- Brown the Farmland Homestyle Sausage crumbling as it cooks.
- Drain on a paper lined plate and then mix with the cream cheese, cheddar cheese and green onion.
- Place a dollop of the sausage mixture on each grits cake and top with chopped tomatoes and chopped green onion.
