Egg & Sausage Roulade

This is such a busy time of year and many of us do a lot of entertaining this month. I have family that stay for several days over the holiday so I try to come up with easy menus that won’t keep me in the kitchen the whole time. I’d rather hang out and socialize than be busy cooking the whole time.

Breakfast is often the hardest meal when it comes to cooking for a large group of folks. That is unless you opt for recipes like this Spinach & Sausage Egg Roulade. This is always a huge hit and it takes almost no effort at all. You can serve 6 or more people a hearty, protein-packed meal without having to turn into a short order cook.

farmland ingredientsThe first step is getting the eggs ready. All you do is beat 8 eggs with a little milk, salt and pepper. Those go in a parchment lined pan then into the oven to bake for about 10 minutes. While the eggs bake, grab a package of Farmland sausage and fry it up. Farmland Homestyle Sausage is gluten free with no MSG, full of the delicious all natural flavor you crave to start your day.

Once the sausage is done you simply mix it with the spinach, goat cheese, walnuts and then you ready to assemble your roulade. For that you just spread the sausage mixture over the cooked eggs and use the parchment to carefully roll the eggs lengthwise over the filling. Sprinkle with more walnuts and serve with tomatoes and sour cream. See…I told you it was simple!

Spinach & Sausage Egg Roulade

Ingredients
  • 8 large eggs
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 oz package Farmland Homestyle Sausage
  • 10 oz package chopped spinach (thawed)
  • 4 oz goat cheese – [i]I like using garlic & herb[/i]
  • 1/4 cup parmesan cheese
  • 1/4 cup toasted chopped walnuts + more for serving
  • chopped tomatoes (if desired)
  • sour cream (if desired)
Instructions
  1. Preheat oven to 350º F.
  2. Line a 10″x13″ sheet pan with parchment paper allowing a 1″ overhang on one side.
  3. Whisk eggs and milk with salt and pepper.
  4. Pour eggs into parchment lined pan and bake in 350º oven for 8 – 10 minutes or until set.
  5. While the eggs are cooking, brown the Farmland Homestyle Sausage crumbling as it cooks.
  6. Once the sausage is browned, drain on a paper lined plate.
  7. Mix the sausage with the chopped spinach, goat cheese, parmesan and walnuts.
  8. Gently spread the mixture over the cooked egg.
  9. Starting lengthwise, using the parchment to gently roll the egg over the filling creating the roulade.
  10. Sprinkle with additional toasted walnuts and serve with chopped tomatoes and sour cream if desired.
