I love this promo-a free chicken for items I buy anyhow! It’s a win-win chicken dinner! I always use the chicken for a meal with some sides-and then I use leftovers for chicken pot pie, chicken salad, etc.
Shredded rotisserie chicken tacos and burritos.
I use the leftover chicken for chicken fried rice.
Homemade chicken soup! Perfect for the cold! 🙂
Chicken curry is a fun way to use chicken when you want something different.
I have a new (EASY) favorite with rotisserie chicken!
– As much cooked chicken as you want, off the bone, hot or cold
– As much salsa as you want
– As much cubed or diced avocado as you want
Mix it all in a big bowl, and eat up! Add some tortilla chips for some crunch.
It’s pretty good on a bed of lettuce as well.
I like to make chicken ala king with half the chicken and the other half make BBQ chicken sandwiches.
For me and my hubby I will cut up the chicken and serve it in a salad. But my pocket eater will have to have a chicken burrito lol
OH, For me there’s nothing easier to do with the rotisserie chicken than making some Goya rice and black beans with plantains on the side. ..yummy… makes me feel like I’m eating at a restaurant 🙂
We usually have the chicken with some sides (salad and a baked potato) on the first night. The second night I use the leftover chicken to make chicken enchiladas. It’s always a big hit.
Chicken, broccoli and rice casserole. Add the chicken and broccoli to cooked rice, mix in a quick cheese sauce, top with breadcrumbs and bake. So good on these cold winter days.
We like to use leftover rotisserie chicken in chicken salad, salads, wraps, chili, tacos…the chicken is great in most anything!
Quick Chicken Mole which contains dark chocolate, diced green chiles,cilantro and cumin. Yum
I take the chicken and take it off the bone while I have Broccoli Au Gratin rice cooking. Once the rice is cooked I add a can of peas and then heat up until warm. Once done I combine all ingredients. Our favorite dish!
Mexican Chicken:
Throw chicken in crock pot with canned black beans, diced tomatoes/ hot pepper mix, canned corn, fiesta salad dressing mix and top with package of cream cheese. Cook on low/med. for a couple hours. Goes good with a side of spanish rice.
I use mine for chicken and dumplings.
I make a King Ranch Casserole that is delicious. You heat cream of chicken and mushroom soups with chicken broth and Rotel tomatoes and add a little garlic salt. You layer cut up corn tortillas, chicken, onions, cheese and soup. You divide all in half and repeat layers and top with cheese.
It is heavenly.

I will be making an Oriental Mandarin Chicken Salad with my free Rotisserie chicken. Using cubed chicken, a combination of salad greens, sliced almonds, mandarin oranges, diced scallions and crispy Chinese noodles, the salad will be tossed with a light oriental ginger sesame salad dressing. Quite good and healthy!
I think chicken salad with celery, walnuts, avocado, and mayo would be delicious.
We love the chicken just as it comes and then a good chicken sandwich is hard to beat!

I love to make chicken quesadillas.
I’d be able to use it for 3 meals: chicken Breast salad with romaine, chicken salad sandwiches, and shredded chicken with yellow rice.
I love to make a pot pie and a chicken/rice casserole.
My favorite is chicken pot pie!!!! Just pull the chicken, mix with blanched, frozen mixed veggies and 2 cans of your favorite cream style soup (I like celery and chicken), throw it all into a prepared pie shell and cook it for an hour on 350* YUM!!!!
I like buffalo chicken dip. Mix chicken with softened cream cheese, your favorite hot sauce (NOT TABASCO), blue cheese dressing and place in a casserole dish. Top with shredded cheddar and bake until warm. Serve with tortilla chips.
Baked Chicken Taquitos with avocado sauce. Yummy!

Make a wrap with cut up chicken and Fresh Attitude Salad (BOGO this week). Add some craisins, chopped apple, and a good balsamic dressing
One of my kids favorite is crockpot chicken and stuffing. All leftover chicken is added to a crockpot. I put one can of cream of condensed poured over it. I then add two boxes of stove top stuffing( use 1/2 of water on directions) and butter. Cover on low for 4 hrs.
The rotisserie chicken is soooo god we eat it ust as is with a salad and another side dish, then with the leftovers we make chcken soup. Yummy!

Serve as is with salad and veggie the first night and then use the meat and bones for broth and soup the second night.

I love adding the chicken to my dressing recipe before baking. Just add a little more chicken broth, bake for the normal amount of time, and you have chicken and dressing casserole.

I like to chill the chicken, then take some of the breast meat off of it for Chicken Caesar Salads. Throw some olives, croutons, cucumbers, and dressing. Perfect meal when it is super hot out here in FL! Rotisserie chickens are so versatile, the possibilities are endless.

The meal I would make with the Rotisserie Chicken is homemade chicken noodles soup. The rotisserie chicken is already seasoned, so all I have to do is chop up the vegetables and add chicken both and the Publix Rotisserie Chicken.
Eat with rice
Southwest chicken soup – can of rotel, can of beans, frozen corn, chopped celery, carrots, onion, etc. Delish!
I would chill the chicken and slice the breasts for sandwiches. Then I’d use the rest for chicken vegetable soup.

I use Publix rotisserie chicken for quesadillas using the Mojo flavor. I also use these chickens for chicken and rice casserole, on top of fresh green salads, and also boil the bones for a great chicken stock!
My family loves rotisserie chicken with side dishes or cut up and made into chicken salad with homemade bread or rolls.
Sometimes I shred the chicken meat and add 1 part Memphis BBQ sauce and one part original Weber BBQ sauce and eat the BBQ chicken in pitas, on buns, or plain.

I really enjoy chicken salad. I shred the chicken, add onions, mayo, and celery. I then toast some bread and add it to it along with some lettuce and banana peppers.
I shred the leftover Rotisserre chicken and make Chinese fried rice with it, or make Chicken Enchiladas. Of course you can add whatever veggies to either item making both filling meals for entire family.

We just add sides, usually rice or potatoes and green beans or broccoli! Yummy and healthy!

I like to make chicken salad wraps
I love cooking with rotisserie chicken. My husband likes it when i shred the chicken, put in a skillet with a little taco seasoning and salsa (cook for just a minute), add a little cheese and roll them up in tortilla and sauce for chicken enchiladas. My son likes it when I make chicken and dumplings with it. (1 carton of chicken broth, 1 jumbo can of biscuit(butter flavored the best), and the rotisserie chicken) – Put broth in large pot with a cup of water and bring to boil. While waiting on broth, open biscuits and quarter and drop into storage bag with a little flour in it. Shake bag. When water is boiling, drop dumplings in and press down for the first 10 minutes until absorbed and no longer float. Cut down head to simmer and add chicken. salt/pepper to taste.

I usually serve the dark meat with sides for one meal. Then I use the breast meat in any recipe that calls for cooked chicken breast. I’ve made chicken salad and buffalo chicken dip with the breast meat too!
Oh let’s see rotisserie chicken would pair well with my knorr pasta or sides for the family. Maybe garlic toast on the side. Left overs I could make into a chicken salad just for me!

Chicken and Dumplings
I like to make a bid pot of chicken soup from the leftover chicken. I place the whole chicken with some meat on it in a big pot with lots of veggies and spices and let it cook for 2 hrs. Then just make some noodles. Sooo good.
I would serve it with some green beans and baked potatoes! Yum!
I like to shred it up and add it to the cheap pasta I have gotten and then add a homemade white cheese sauce and then any veggies I have and a can of black beans. I freeze the leftovers and take for lunches at work.

Chicken Noodle Soup! I LOVE to use the rotisserie chicken bones and skin to make the chicken noodle soup base/stock. The flavors are simply amazing and everything gets used!
I make my chicken into Chicken Patties, freeze some for later! So easy! Shred chicken, add breadcrumbs, egg, onion, and season.

My all time favorite is chicken enchiladas, I use the publix chicken when I’m on a time crunch it has so much flavor already built in.

I love using the Rotisserie Chicken for a healthy as a Salad. Some Romaine Salad, Spinach leaves along with some dried fruit makes a great entree.
I love rotisserie chicken salad sandwiches. These are easy to make. Simply cut/shred pieces of the rotisserie chicken, add mayo, chopped celery and pepper for seasoning to a bowl. Mix, chill for an hour and then add to your favorite bread. Yum!
A meal idea for the rotisserie chicken that my family always prepares is to serve with macaroni and mashed potatoes and green beans!

I think I would have the rotisserie chicken as it is and make a side of garlic roasted broccoli,cauliflower,carrot and sweet potato.
