The big game is only a few days away. I have been sharing some great recipes to help you create the perfect game day menu for your upcoming get togethers. Today I wanted to share another idea that’s sure to impress your guests – Baked Shrimp Parmesan Empanadas!
This snack is the perfect party food as you get a tasty combination of ingredients all tucked into a convenient, handheld pie. Now, don’t let the appearance of these scare you. While they may look like they’d be difficult to make, they are actually very simple to prepare. There is really very little cooking involved, it’s mostly just assembly…you can do it!
The taste of these is just amazing! Forget about boring pizza…add some flair to your game day menu. Add these empanadas to your starting lineup and you’re sure to get your home team’s seal of approval!
- 1 Tbsp. olive oil
- 1 cup chopped onion
- 2 cloves garlic, chopped
- 1 jar (1 lb. 8 oz.) Ragu® Sauce
- 1 lb. uncooked medium shrimp, peeled, deveined, and coarsely chopped
- 2 Tbsp. finely chopped fresh parsley leaves
- 1 package (8 oz.) mozzarella cheese, cut into 1/2-inch cubes
- 2 packages (12 to 14 oz. ea.) frozen empanada discos, thawed
- 1 egg, slightly beaten
- 1/2 cup grated Parmesan cheese
- Preheat oven to 425°.
- Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook onion, stirring occasionally, 3 minutes. Add garlic and cook 1 minute. Stir in 1 cup Sauce and cook, stirring occasionally, 2 minutes or until thickened. Add shrimp and cook, stirring occasionally, 2 minutes or until shrimp turn pink. Stir in parsley. Cool, then stir in mozzarella.
- Lightly roll empanada discos to 5 inches. Into centers of discos, evenly spoon shrimp mixture. Brush edges of discos with water, then fold discos in half over filling, crimping edges to seal.
- On two cookie sheets, arrange empanadas. Brush tops with egg, then evenly sprinkle with Parmesan cheese. Bake 20 minutes or until golden. Serve empanadas with remaining Sauce, heated.

By the way, I haven’t ever heard of empanada discos – I just use Pillsbury Grands biscuits when I am making something like this. I just roll the biscuit dough rounds out to flatten into about a 6″ or so circle and fill with whatever I have on hand, it can make leftovers so much more appealing to have in a lttle pocket!
Ha…my guys love anything in a pocket too! I’ll also use whatever I might have on hand in a pinch. The discos are super handy as they are pre-made and you can whip out a ton in a flash. So these are perfect if you need a bunch for a party! You can also use leftover pizza dough or like you mentioned biscuits or crescent dough as well.
