Bacon Wrapped Buffalo Chicken Bites

I am a huge fan of Buffalo wings but I don’t get to eat them too often because they aren’t exactly figure friendly. So when I get a craving for wings, I whip up a batch of Bacon Wrapped Buffalo Chicken Bites instead.

These little morsels are just what I need when I want that Buffalo chicken flavor. Instead of a measly amount of chicken that you get in a little wing, you get a big bite of chicken breast oozing with warm cheese. Plus, the Farmland Bacon keeps the chicken moist and delicious.

Bacon Wrapped Buffalo Chicken Bites

Ingredients
  • 1 package Farmland Bacon
  • 1 pound chicken breast
  • 3 – 4 ounces of crumbled blue cheese
  • Buffalo hot sauce
  • celery
  • Blue cheese dressing
Instructions
  1. Preheat oven to 375º F.
  2. Cut the chicken breast into 1 inch chunks and pound until about 1/4 inch thin.
  3. Add 5 – 10 drops of Buffalo Hot sauce in the middle of each pounded chicken piece and then sprinkle with 1/2 teaspoon of blue cheese crumbles.
  4. Roll and wrap the chicken around the cheese making sure it’s completely enclosed inside the chicken.
  5. Cut the Farmland bacon strips in half and tightly wrap a piece around each stuffed chicken chunk. Tuck the ends and place on a rack on a baking sheet.
  6. Bake at 375º for 25 minutes or until the bacon is golden brown and the chicken is cooked through.
  7. Serve with blue cheese dressing and celery.
