Shredded rotisserie roasted with tomatoes onions. On top of tosados with cabbage and cheese
Rotisserie Chicken Enchiladas
Ingredients
cooking spray
2 tablespoons fresh cilantro, coarsely chopped
1 small tomato, finely chopped
1/2 chilled Deli rotisserie chicken (2 cups), chopped
3/4 cup refried beans
2 (10-oz) cans enchilada sauce
6 (10-inch) flour tortillas
1 (2.25-oz) can sliced black olives with jalapeño (drained)
1 1/2 cups Mexican-blend cheese
aluminum foil
Prep
– Preheat oven to 350°F. Coat 9-inch square baking dish with cooking spray.
– Chop cilantro; place in medium bowl. Chop tomato; set aside.
– Remove chicken (breast only) from bones; cut into bite-size pieces and add to cilantro.
Steps
1. Stir into chicken: beans and 1 can enchilada sauce. Spoon chicken mixture equally down center of tortillas; roll tortillas around filling and place, seam side down, in baking dish.
2. Pour remaining can of enchilada sauce over enchiladas. Sprinkle tomatoes, olives, and then cheese evenly over enchiladas.
3. Cover with foil; bake 15 minutes.
4. Remove foil; bake 5-10 more minutes or until thoroughly heated and cheese melts. Serve. (Makes 6 servings.)

I make classic chicken salad and serve it in little puff pastry cups. I also serve Chicken Quesadillas using pepper jack cheese and Hatch green chiles.
I will shred the chicken and make chicken tacos.

I love using a rotisserie chicken to make crispy chicken wraps! I cook some brown rice, then season it with garlic salt, pepper, cumin, and some fresh lime juice when it’s done. Get a flour tortilla, and fill it with some of the seasoned rice, shredded chicken, cheddar cheese, black beans, green onions, and sour cream. Spray with cooking spray, and cook on a griddle for a couple of minutes on each side until crispy. Serve with sour cream and salsa for dipping. These are a hit on game day with everyone from age 3-90!

Remove chicken from bone
Add chopped onion, grapes, red or green, celery, pecans salt and pepper.
Add mayo.
Can’t give amounts on each item just till it taste yummy!!!
I was planning on making homemade mac and cheese and doing the promotion to get the lemon pepper rotessirie chicken to eat just as it is with it. I’m making it this Sunday so we have a hearty meal while enjoying the games.
Just going to debone the rotisserie chicken & make some nice platters with different cheeses & olives. Enjoy the game instead of cooking!
Ingredients
8 ounces cream cheese
1/2 cup finely chopped celery
1/2 cup hot sauce
1 rotisserie chicken, shredded
1 cup crumbled blue cheese
Crackers, bread or carrot sticks, for serving
Preheat the oven to 425 degrees F.
In a medium saucepan over moderate heat, melt the cream cheese until smooth, about 3 minutes. Add the celery, hot sauce and chicken and mix well. Transfer the mixture to a 9-inch pie plate and sprinkle the crumbled blue cheese on top. Bake until hot and bubbly, about 25 minutes. Serve with crackers, bread or carrot sticks.
My recipe is simple. I can’t get enough BBQ:
1) Chop or shred the rotisserie chicken meat.
2) Mix together 1 part Weber’s Original BBQ sauce and 1 part Sticky Fingers Memphis Style BBQ sauce.
3) Add desired amount of sauce mixture to chicken and heat through.
4) Serve on buns.
Love buffalo chicken
The rotisserie chicken makes lettuce wraps so simple! Just shred the chicken, mix with a little Hoisin sauce, sesame oil, cilantro, scallions, cashews, soy sauce, fresh grated ginger and rice vinegar. Serve with shredded veggies and bibb lettuce. Portable, handheld and so yummy!

Buffalo chicken dip made using my slow cooker. YUM!
1 block reduced-fat cream cheese, roughly cut into 1-inch cubes
4 ounces crumbled blue cheese
3 cups diced or shredded cooked chicken
2 cups shredded part-skim mozzarella cheese
1 cup hot sauce (I recommend Frank’s)
1 cup plain Greek yogurt or sour cream
1/2 cup thinly-sliced green onions (about 3 green onions)
1 Tablespoon ranch seasoning
(optional toppings: extra crumbled blue cheese, thinly-sliced green onions, chopped celery, and/or a drizzle of hot sauce)
Spray the inside of the bowl of your slow cooker with cooking spray.
Add all ingredients to the bowl of the slow cooker, and stir until combined. (You can also stir the ingredients together in a separate bowl, and then transfer that to the bowl of the slow cooker afterwards.) Cook on high for 1.5 – 2 hours, or until the cheeses are all melted. (Alternately, you can also cook this on low for 3-4 hours, or until the cheeses are all melted.) Give the dip a good final stir, then transfer to a serving bowl and garnish with extra blue cheese and green onions. Serve with chips.

I love making pulled chicken nachos.
Tortilla chips topped with pulled chicken and shredded cheese microwave or bake until cheese is melted. Then add salsa guac and sour cream.

Can’t go wrong with chicken salad. I got one free chicken this morning and couldn’t wait, so topped my salad with the Lemon Pepper chicken for lunch.
I just put it on a plate and eat like an animal, while my wifes not home. LOL
I use it for either mini chicken pot pies or chicken and yellow rice. (my 4 year olds fave)
I like to make chicken salad lettuce cups. Mayo, avocado, shredded chicken, chopped celery, and walnuts with garlic and onion powder, salt and pepper. Serve in butter lettuce cups.

Chicken pesto pizza: jar of pesto sauce, chicken, tomatoe, black olives, mozzarella bake at 400 for 30 mins on pizza stone.

Chop chicken for the number of servings needed. Heat and Mix with Taco Seasoning.
Cooked Brown Rice
Heated Black Beans
Black Olives
Shredded Lettuce
Chopped Tomatoes
Shredded Cheddar Cheese
Build each salad from above using the items that you enjoy on it. Serve with Velveeta cheese and Rotel tomatoes heated together and taco chips.
The melted rotel and cheese is also good poured over the salad !

im going to pull the chicken and make tacos! this week ill do little burritos with the flatout protein wraps that are on sale!
Who wants to be in the kitchen on game day? I’ll be picking up some salads from the deli to serve along with the rotisserie chicken.
A big pot of white chili with chicken bar set up!
At another game day I will be making southern pulled BBQ chicken sliders or on mini waffles top with a pickle slice..so good! And easy too.
I make chicken salad on game day with my rotissere chicken. Dice the chicken, mix mayo with sour cream, fresh lemon juice, salt and pepper. Blend well, add dice chicken, and toss with grapes, and toasted pecans. Yeah football season.
I make an awesome artichoke dip: mayo, quartered artichoke hearts, Monterey Jack cheese, grated cheese and sprinkle with paprika on top.
We like to make chicken nachos with rotissere chicken from Publix! We load them up with chicken, cheese, lettuce, tomatoes, olives, sour cream, and salsa!
I would make a wonderful cold chicken salad for the finger sandwiches.

I like to shred up the chicken and use it to top a pizza. Publix has this awesome buffalo dip. All i do is spread the dip on top of a pizza crust, sprinkle with mozzarella cheese, top with the shredded chicken, and throw on some diced red onions. Its so easy and delish. I then use the rest over chicken for other meals.

Chicken sandwiches and salad.
I love to make my frito chicken casserole. I take a can of green enchilada sauce, a can of rotel, two packages of cream cheese and a medium diced onion in a pot to heat. At this point I would take my publix rotisserie chicken and separate into small bite size pieces and place into the mix to heat up. Once up to a good safe temperature put mix into a 9×13 baking dish top with frito scoops corn chips and extra sharp cheddar cheese. Baker for 15 to 20 minutes until melted and golden brown. Serve with extra scoops corn chips for scooping with sides of salsa and sour cream.

pull chicken from bone, mix with buffalo sauce onions, bell pepper and mozzarella cheese(all measurements should be to suit your taste and crown)
spoon out onto puff pastry and bake until brown
I made these Chicken Avocado Pita Chip Bites and they are a great finger food for a Football Game. Crazy fast and easy to make and crazy good! Make them with you favorite pita chips, sauce and cheese!
Ingredients:
A Publix Rotisserie chicken (shredded)
1 bag Stacy’s Fire Roasted Jalapeno Pita Chips (or other favorite Pita Chips)
BBQ sauce (or other favorite sauce)
Sliced avocado
Grated cheddar cheese (or other favorite cheese grated)
Lime juice
How to Make:
Mix the shredded Rotisserie chicken into sauce. Arrange pita chips on a baking sheet. Place a spoonful of chicken mixture on each chip. Top with cheese and avocado. Bake in a 250 oven for 10 minutes. Squeeze lime on top. Serve them warm with some icy cold fruity Sangria to make them a real hit!

1 package cream cheese, softened
Chicken
1/2 cup buffalo wing sauce
1/2 cup ranch salad dressing
2 cups shredded Colby-Monterey Jack cheese
I would make some Chicken Quesadillas with the
Publix Rotisserie chicken (shredded)
1 can green chilis
1 sliced onion (sliced thin)
1 packet of taco seasonings
1/2 lime
shredded cheese
flour tortilla
Mix all together except cheese and lime in a pan and heat to warm
after it is heated squeeze in the lime
get a pan nice and hot and on half a flour tortilla add eat mixture and cheese place in pan and top with other flour tortilla cook til golden and serve with sour cream guacamole and salsa
Simply use leftover , add chopped green onion and garlic . Put into iron pan to fry . Very delicious
With rotisserie chicken I always make my delicious Buffalo Chicken Dip and serve it with toasted garlic pita bread cut into triangles

I will use some of the breast meat to make chicken salad sandwiches. Just chop it up, add some may, garlic powder, onion powder, celery, and black pepper. Then spread on some white mountain bread with lettuce and cucumbers. Delicious and so easy!

6 cups of lettuce (any type)
1 cup shredded Publix Rotisserie Chicken
1 sliced red bell pepper, 1 sliced green bell pepper and 1/2 cup canned Publix black beans (rinsed)
In another small bowl whisk together 1/3 cup greek yogart, 3 tbsp lime juice, 1/4 tsp chili powder and 1/4 tsp kosher salad
Pour mixture over salad, and serve with tortilla chips! Serves 2

BBQ Chicken Tacos
Ingredients
2 c. shredded skinless rotisserie chicken meat
⅓ c. barbecue sauce
1½ c. fresh corn kernels (1/2 cup per ear)
2 plum tomatoes
1 tbsp. fresh lime juice
8 flour tortillas
3 c. thinly sliced iceberg lettuce
½ c. reduced-fat sour cream
Directions
In large bowl, stir together chicken, barbecue sauce, corn, tomatoes, and lime juice.
Just before serving tacos, place stack of tortillas between paper towels on microwave-safe plate; heat in microwave on High 10 to 15 seconds to warm.
To serve, divide lettuce and chicken mixture among tortillas; fold over to eat out of hand. Serve each with a dollop of sour cream.

Flatbread ( We looove Naan Flatbread, but any brand will work)
Spread Favorite BBQ sauce on flat bread ( we love our local BBQ sauce and Sweet Baby Rays)
Top with Publix Rotisserie Chicken (shredded or chunks)
Sprinkle (or cover lol) with shredded cheddar cheese
Pop in oven at 375 until cheese is melted….Yummy!

I love to use the plain Rotisserie chicken, I cut the chicken into bite size pieces, add mayo, mustard, salt, pepper, sweet salad cubes and diced onion. I mix all the ingredients together and put in fridge the night before. The day of I make sandwiches with a variety of snacks. Sorry I don’t have measurements, I have been making this for so long without a recipe. It is very simple but delicious!

Spicy Chicken Tortilla Soup
Chicken from 1 rotisserie chicken
1/2 cup chopped onion
1 clove garlic, minced
1 T oil
3 medium zucchini sliced
4 cups chicken broth
1 16 oz. Can stewed tomatoes
1 15 oz. Can tomato sauce
1 12 oz. Can corn (I always use frozen)
1 t cumin
Salt and pepper
Serve with tortilla chips and Monterrey Jack cheese
Sauté onion and garlic, add zucchini and next 6 ingredients, bring to a boil and simmer 15 to 20 minutes
