I know many of you will be in the kitchen a lot this week working to prepare your big Thanksgiving feast. Of course we’ll still have to cook up the regular meals up to, and after Thanksgiving! I am betting that you are like me and looking for quick and easy meal ideas to get you in and out of the kitchen lickity split!
One of my favorite meals to whip up in a flash is this Quick and Easy Moo Shu Pork. You get huge flavor without having to cook all night or spend a ton of money on takeout! The recipe is big on flavor, easy to make and easy on the budget…my favorite combination!
Now to keep this recipe simple, I opt for pre-made tortillas, a packaged coleslaw mix and a Smithfield Marinated Pork Tenderloin. The pork is already slow-marinated and perfectly seasoned so that I simply open the package and it’s ready to go.
Once you have all your ingredients assembled you can literally have a meal on the table in less than 15 minutes. Just watch out as once it hits the table, it will vanish in a flash.

- Smithfield® Roasted Garlic and Cracked Black Pepper Fresh Pork Tenderloin, julienned
- 2 tablespoons of chili oil, divided
- 1 teaspoon canola oil
- 3 eggs, beaten
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced (or grated if frozen)
- 8 oz shiitake mushrooms
- 2 cups coleslaw mix
- 1/2 cup bamboo shoot, julienned
- 1/2 cup hoisin sauce (+ additional 1/2 cup for serving)
- scallions, chopped
- 8 tortillas, warmed
- Heat 1 tablespoon of chili oil in a large skillet or wok.
- Add the pork and cook, stirring constantly for about 2 minutes and then remove from pan straining any juices. Set aside. (the pork will be medium rare at this point)
- Pour any excess juice/oil from the pan and add 1/2 teaspoon of canola oil to the pan and scramble the eggs. Set aside with the pork.
- Next heat the remaining 1 Tablespoon of chili oil and cook the ginger, garlic and mushrooms for about 2 minutes.
- Add the coleslaw and bamboo shoots and stir fry for an additional 2 – 3 minutes.
- Add the cooked pork, scrambled egg and 1/2 cup of hoisin to the pan and cook an additional 2 minutes until everything is heated through.
- Remove from heat.
- Spread hoisin sauce on the tortillas, add a serving of moo shu pork on top and sprinkle with chopped scallions.
- Fold the tortilla around the filling and serve warm.
