One of my favorite things to make are hand pies…they are basically a home made version of a Hot Pocket. You can fill them with anything you like and then just pop them in the oven and bake them up.
When you take advantage of the magic of pre-made dough, life is crazy simple. There is no measuring or kneading necessary. You simply pop open a can and you are in business. In just minutes you can have a tasty meal that everyone loves. The best part is that each individual sandwich can be customized. So everyone in your family can make theirs exactly how they want them. Have picky eaters who won’t touch a green veggie? No problem—leave the broccoli out! Want to add some sausage in place of the ham? That is easily done. No matter what you stuff in your hand pie, it always turns out great and the best part, it’s easy and typically a very economical option.
This week, my Easy Ham, Broccoli & Cheese Hand Pies are super inexpensive thanks to the deals at Publix. With the sales this week you can put these together for under $2 per serving! Be sure to check the Publix ad for more deals as well as any matching coupons.
- Publix Shredded Cheese or Slices, Assorted Varieties, 6 or 8 oz. pkg., $2.50
- Smithfield Cubed Ham or Diced, Smoked, Fully Cooked, 8 oz. pkg., BOGO $3.29
- California Broccoli, each bunch, $2.50
- 1 can of refrigerated biscuit dough (large Grands type biscuits)
- Dijon or honey mustard
- 8 oz diced ham
- 1 1/2 cups shredded mozzarella cheese
- 1 cup broccoli florets, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic salt or bread seasoning
- Preheat oven to 350º F.
- Press or roll out the biscuits until they are large flat circles – approximately 2 1/2 times the regular size.
- Squeeze about 1/2 teaspoon of honey/dijon mustard on the dough.
- Top about an ounce of ham and about 2 tablespoons of shredded cheese.
- Add 1 – 2 tablespoons of chopped broccoli.
- Fold the dough in half and pinch the edges until sealed (use a fork to crimp the edges).
- Brush the top with olive oil and sprinkle with garlic salt.
- Bake for 15 minutes or until golden brown.
I love doing these and I always keep Grands biscuits on hand, stocking up when they are on sale! Sometimes I even do these as appetizers by cutting the biscuits in half or even thirds to make little bite size poppers with a variety of ingredients. Or, if I have leftovers I completely transform them by making these little poppers, you can put practically anything in them. Yum!
