I am not sure why they call it summer break as I seem to be busier during the summer than I am during the school year. I think it has a lot to do with the fact that the nice weather makes us want to get out of the house more often. No reason to be stuck in the house when we can be out enjoying the season.
I find that when it comes to cooking, I aim to get in and out of the kitchen as quickly as possible too. I have found tricks to serving up a tasty dinner that reduces my prep/cook time dramatically!
Since we are often already outside, I will have my husband fire up the grill and we’ll enjoy a meal out on the patio. This helps keep my house cool since I am not using the oven and an added bonus is that my kitchen stays nice and clean. When it comes to the side dishes, I’ll often have my husband add veggies to the grill with the meats. Sometimes I’ll just serve up a simple salad and then other times I take advantage of time savers like Veetee Rice. My family gets a great meal and there’s little to no cleanup which comes in pretty handy on a busy summer night.
