The kids are back in school and things are hectic!
Trying to get back into a “normal” routine takes a few weeks to master. This year my guys are coming home even later than they have in the past. Jake has swimming practice every day after school which has him coming home after 5 pm. Jeb has football practice that runs from 6 – 8 two nights per week. So dinnertime is often rushed between activities or super late. It’s not ideal…but sometimes we are eating around 8:30 at night.
As you can imagine, my menu has to be extremely quick and easy. I am using my slow cooker more often and doing a lot of prep early in the day so I can whip up dinner fast. Convenience is the key to getting my family fed so that we can make this crazy schedule work!
I have lots of frozen veggies that only require a few minutes in the microwave. I also restocked my supply of Veetee Rice so that I simply heat and serve for perfectly cooked rice that is on the table in just minutes. Those shortcuts are my key to keeping my sanity while I get used to this new back-to-school schedule!
