They stress me out and they still want me to feed them every day—tee hee! Is it any wonder that I choose meals like this Italian Marinated Roasted Chicken? I depend on recipes that require little to no effort. I have found that multitasking is the only way that I can survive most nights, so being able to throw dinner in the oven is a necessity some nights!
This recipe for Italian Marinated Roasted Chicken is a fabulous meal for a busy weeknight. You simply marinate your chicken, chop a few veggies and toss it all in the oven. Cook up some zucchini at the last minute for a full meal that tastes great but doesn’t eat up all your time!
Plus, it’s made with Wish-Bone® dressing so you know it’s packed with great flavor. This recipe uses Wish-Bone’s E.V.O.O. Lemon Herb Dressing. You get a fresh, tangy taste that pairs perfectly with the chicken and veggies. My guys love the taste and I am thrilled being able to whip up dinner with hardly any effort.
- 1 bottle Wish-Bone® EVOO Lemon Herb, divided
- 1 (3 to 4 lb.) whole chicken
- 1-1/2 lbs. all-purpose potatoes, cut into 1 –inch chunks
- 4 shallots, cut in half
- 2 zucchini, cut in half lengthwise and sliced
- 1/4 cup shredded parmesan cheese
- Pour 1/2 cup Dressing over chicken in large bag; turning chicken to coat. Marinate in refrigerator breast side down 30 minutes up to 3 hours. Remove chicken, discard marinade.
- Preheat oven to 375°F and place chicken in shallow roasting pan with potatoes and onions. Roast 50 minutes or until chicken is fully cooked and potatoes are tender.
- Meanwhile, heat ¼ cup dressing in large skillet over medium-high heat and cook zucchini, turning occasionally, 5 minutes or until starting to soften. Sprinkle with cheese and cover. Cook 2 minutes or until cheese is melted and zucchini is golden brown.
