As I have mentioned before, I create a menu every week in an effort to help me keep my sanity and maintain my weekly grocery budget. Typically I sit down over the weekend and plan out the menu. There are lots of different things that will have an impact on my menu each week. Things like…my schedule, what I have on hand, what needs to be used in my fridge, the boys activities, what’s on sale and how much moolah I have…are just a few of the things that will determine what goes on the menu.
Granted, it’s not rocket science but there are a lot of factors to consider. When I am prepared for the week, I typically save more money AND more time which makes me a very happy gal!
When I shopped this weekend, I happened to find pork loin on sale for $2.49/lb! Now I am not sure if this deal is specific to my store but you might want to check your store when you shop as that is my kind of deal. Now I am paying a bigger chunk of money at once but I will get 4 meals plus leftovers from that one big pack of meat!
I will use this over the next two weeks to keep things interesting for my guys. Tonight I plan on making Pork with Camembert & Mustard. It’s a family favorite that’s super simple and easy thanks to the convenience of Veetee Rice.
Later in the week, I will cut some of the pork for a simple stir fry. The big pork loin will go into my slow cooker next week for bbq sandwiches and then I’ll probably just grill the last set of chops! All easy meals, all economical and all delicious—a winning combination!

I love the Veetee website for recipes. Many of the recipes use British measurements so I converted this one for you the way I make it. It’s a delicious and super easy recipe for a busy weeknight. Stop by Publix and grab some pork and Veetee Rice and a couple of additional ingredients and serve this one up…I think you’ll love it as much as we do!
- 2 trays VeeTee Basmati & Wild Rice
- 1 pound pork fillet, sliced 1/2 inch thick
- 1 tablespoon butter
- 2 ounces cider
- 5 oz creme fraiche
- 2 teaspoons mixed fresh herbs, finely chopped
- 1 cup camembert, chopped into chunks
- 1 tbsp of Dijon mustard (heaped)
- salt and pepper to taste
- Season the pork fillet slices with salt & pepper.
- Melt the butter in a heavy frying pan over a medium heat then fry the pork for 5-6 minutes until slightly browned, turning occasionally.
- Add the cider and bring to the boil, scraping the base of the pan. Stir in the creme fraiche, herbs (if using) and simmer gently.
- Add the cheese and mustard together and warm through until all the cheese is melted.
- Heat the rice according to pack instructions, and serve the pork on a bed of rice.
