I made this for dinner not too long ago and my guys devoured it. Ok…so the boys wouldn’t touch the peppers but they did eat several servings of the rice/sausage filling. It was such a hit that I added it to my menu rotation!
- 1/2 package of Eckrich Skinless Smoked Sausage, sliced in half, lengthwise
- 1 teaspoon butter
- 1/2 cup chopped onion
- 2 cloves fresh garlic, minced
- 3/4 cup white rice
- 1 1/2 cups water
- 3 large bell peppers, halved lengthwise, seeds and ribs removed
- 1 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 1 teaspoon dried basil or oregano
- 2 cups baby spinach, coarsely chopped
- 1 tomato, chopped
- Preheat oven to 400 F.
- Slice Eckrich Smoked Sausage Rope in half lengthwise. Place on one end of well-greased rimmed baking pan (15-inch x 11-inch).
- In a 3-quart saucepan, melt butter over medium heat. Add onion and garlic; cook 2 to 3 minutes or until slightly tender, stirring occasionally. Add the rice and water; bring to a boil. Reduce heat to medium-low; cook covered for 15 to 20 minutes or until water is absorbed and rice is tender.
- Meanwhile, sprinkle the inside of peppers with ½ teaspoon of the salt; place face down on pan with sausage. Bake 19 to 20 minutes or until peppers are tender. Cut sausage into slices.
- Stir remaining ½ teaspoon salt, pepper, basil, spinach, tomato and sausage into rice mixture; cover and let stand several minutes to heat thoroughly. Flip peppers onto serving platter; fill with sausage and rice mixture.

I chop Eckrich Smoked Sausage up into medallions, fry it up quick and add it to chopped cabbage that’s been cooked down real well and pasta. Mixed all together it’s a delicious, quick meal.

I sauté onions and peppers, grill the smoked sausages, and crisp up some Italian rolls to make sausage sandwiches. Serve with Alexa fries – my kids love this meal!

I cook Eckrich Smoked Sausage cut in rounds and add Red bell Peppers and Onions in a skillet, in what Italian call “Peperonata”, so yummy! Also I used them instead of the Anduille in my Gumbo.
I slice the sausage and grab a bag of Publix stir-fry veggies. Then quickly stir-fry with soy sauce and add to rice for a quick meal.
I make cream of corn soup. Saute some chopped onion with sliced Eckrich Smoked Sausage. Add a can of creamed corn and some black pepper. Cook until flavors meld. Then add some sour cream and cook over low heat until warm.
I put this sausage in a Garbanzo Bean Soup—so good

I would make a Hungarian red potato goulash dish and also pair the sausage with an assortment of roasted veggies.

I I always use smoked sausage in my Spanish Rice recipe. In addition, I use the Smoked Sausage in my BBQ Beans recipe, it just wouldn’t be the same without it.
When we power up the smoker we try to fill it up with a variety of meats including Eckrich Sausage and we need to only cook/clean once to enjoy easy meals the rest of the week. The kids love Eckrich sausage on Shish Kebabs on the grill. They get to build their own skewers using sliced sausage, mushrooms, peppers, onion, cherry tomatoes and lots of other fresh veggies.
Your stuffed peppers looks like a recipe I make. I keep the peppers whole with the top cut off and fill through the top. I would make sausage, peppers, mushrooms and onions with the Eckrich sausages in a diced tomato base over noodles.
Either with rice or pasta, also good pizza topping!

I CUT INTO BITE SIZE PIECES AND BROWN IN A SKILLET WITH OIL. THEN ADD IT TO CUT UP POTATOES AND CAUJUN SEASONINGS AND BAKE IN THE OVEN.
I JUST PUT IT ON THE GRILL WITH PEPPERS AND ONIONS.
I have cooked and my family has ate Eckrich smoked sausage for many, many years. How about putting pieces of it in a delicious Omelet with cheddar cheese (or your favorite omelet ingredients )to start the day with a hardy breakfast.
By the way, I live near a street that sounds like Eckrich. But, that is a coincidence, I think. 🙂 I do have a love for their sausage.

I cut the sausage round pieces like coins. I cook it on a skillet. I then cook cut up potatoes and make skillet potatoes. I serve it with the sausage. It is a family favorite.

We love to make sheet pan sausage – slice up the sausage, some potatoes, zucchini and green beans – coat it in olive oil, garlic powder, salt, and pepper, then bake it in the oven on a cookie sheet. So easy and sooooo delicious!

I make a dish called “sausage & fried potatoes”. It’s what I call my “lazy man dinner”. It’s what I make when I dont feel like cooking. No it’s not healthy but neither is going thru a drive thru and spending $5 on a burger when you dont feel like being in the kitchen.

I would use this sausage in a breakfast biscuit cup. Just chop up into cubes and cook with some cream cheese and potatoes. then get a cupcake pan and put raw dough in each pan lining it.. Add the sausage mixture and bake in the oven until bread is done and puffed 🙂 Easy breakfast sausage cups!! Enjoy 🙂

I grill the smoked sausage. Then I saute peppers and onions in a little olive oil. I buy Publix French Bread and place the sausage, peppers, onions and slices of provolone cheese. Cut the sandwich into smaller pieces and serve. Yummo.
I use canned red kidney beans and this sausage and pumpkin seasoned to taste and served with small portion of rice. Kids loves it.

Not sure if I would make the recipe with the smoked sausage. I find that most smoked sausages are way too salty. If Eckrich has a low sodium version, I would try it.

Simple one skillet menu for two. Heat Ekrich Sausage as directed in skillet. Reserve half for another meal. Add to skillet some onions and green pepper bits, frozen veggies, and after a few minutes add half the sausage. Season items with seasoned salt, maybe add cherry tomatoes and serve with salad. This is so quick and easy to clean up!
We just serve it mixed with black beans and rice.
I cube my smoke sausage and mix with a bag of thawed hash browns, add 1 container of sourcream, 1/4 stick of butter, salt, pepper and shredded cheese and bake on 350 for 30 minutes. My family loves it for breakfast or dinner.
