You guys know that I am all about easy recipes, right? Now that obviously doesn’t mean I am hitting the local drive thru…my budget would never allow for that. Plus, my boys are so big now, I swear I wouldn’t be able to feed them and still pay my bills if I didn’t actually cook our meals.
Of course easy means nothing if the meal isn’t tasty. My boys are 11 and 13 and I think they are more picky NOW than they were when they were 2! Luckily pasta is always a welcome meal at my table. My guys will eat any kind of pasta that I put in front of them. So, I use that to my advantage and whip up meals like this Kale Pesto Penne!
Ok—don’t crinkle up your nose. Yes, it’s made with kale but honestly, you probably would never know it. The trick at my house is to say as little as possible. I don’t broadcast the fact that I add veggies to my meatloaf or put zucchini in bread. Those are facts that my guys are better off not knowing. If I give them a reason to complain—they will!
My recipe is really just my basic pesto recipe that I have share before with a few modifications. Pair with the fresh, homemade taste of Ronzoni Homestyle pasta and some tomatoes and dinner is ready in under 15 minutes.

- 1 box Ronzoni Penne Homestyle Pasta, cooked according to directions
- 1 pint of cherry tomatoes, halved
- 5 oz baby kale
- 2 cloves garlic
- 2/3 cups olive oil
- 1/4 cup walnuts
- 1/3 cup parmesan cheese
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Place basil, garlic and walnuts in a food processor and pulse until chopped.
- Drizzle olive oil into mixture pulsing until smooth.
- Add parmesan, salt & pepper and pulse to combine.
- Add half of the pesto to the hot pasta with the tomatoes and gently stir to combine.
- Store the remaining pesto in an airtight container with a thin layer of olive oil on top of the pesto.

That is kale it looks like spinach! I’ve never tried kale but maybe I should reconsider.
It’s baby kale and it’s so different that the curly big boys! It’s tender and much tastier. Though I do love a batch of baked kale chips–YUM!!
