I am sure you can put that rice to use in lots of your favorite meals…but, when you need a tasty DESSERT—why not try this recipe for Arroz Con Leche? It’s such a great change of pace from cookies, pies and cakes. I bet your family will love it as much as mine!
There are a million different variations on this recipe but this is my personal favorite. I can change it up just by using a different creamer and sometimes I have been known to add in a little rum to give it that amazing rum raisin flavor that just can’t be beat.
- 7 cups water
- 1 cup Mahatma Rice
- 2 cinnamon sticks
- 4 whole cloves
- 1 12 oz. can evaporated milk
- 1 14 oz can sweetened condensed milk
- 1/2 cup whole milk
- 1/2 cup creamer – [i]I like a vanilla flavored creamer[/i]
- ground cinnamon for serving
- Combine water, cinnamon sticks and cloves in a saucepan over high heat and bring to a boil.
- Add rice, reduce heat to low and cook until rice is tender, about 18 – 20 minutes.
- Drain the water and remove the cloves and cinnamon sticks. Return rice to pan.
- Add whole milk, creamer, evaporated milk and condensed milk.
- Cook uncovered over medium high heat, stirring often until mixture has thickened, about 15 – 20 minutes.
- Stir in the raisins.
- Serve the Arroz Con Leche sprinkled with ground cinnamon.
