Why not pick up a bag and grab a few additional ingredients and whip up a batch of my Easy Italian Wedding Soup. This soup takes your standard chicken noodle soup and kicks it up a notch. This is my go-to recipe when I need to take a meal to a sick friend. I always make a double batch so that I can have some ready to eat and then freeze the second batch for a quick and easy meal that I can toss in the crockpot and heat up on my extra busy days!

- 20 oz bag Arrmour Beef Meatballs
- 64 oz chicken stock/broth
- 1 tablespoon olive oil
- 1 cup carrots, sliced
- 1 onion, chopped
- 3 cloves garlic
- salt & pepper to taste
- 1 cup acini de pepe, orzo or pastina pasta
- 9 oz fresh spinach, chopped
- Heat the olive oil in a large pot or Dutch oven over medium high heat.
- Add the onion and carrot and cook until tender, approx 4 – 5 minutes.
- Add the garlic and cook an additional minute, until fragrant.
- Add the chicken broth and season with salt and pepper to taste.
- Add the Armour Meatballs and pasta and bring to a boil.
- Reduce heat and simmer approximately 10 – 15 minutes until pasta is tender.
- Stir in the spinach and serve.
