I love it for a lunch that I can take on the go. I have been volunteering at Jeb’s school two days each week. His school is very small so they don’t offer lunch like a traditional school. They do have some catering options that are available twice each week. So, I go in to help pass out the food. Since I am playing lunch lady, I am at the school from 10:45 until 1:00. That means I either have to eat lunch super early, super late or eat something quick in between the times that I am passing out food to the kids. Bringing a quick lunch is definitely my preferred option.
Lately I have been packing a toss together rice bowl. Basically, I bring a cup of Minute Ready To Serve and a jar filled with lots of tasty toppings and then toss them together.
It’s a great meal that I can prep ahead of time and have ready when I need it. I just add my favorite dressing to the jar and pack it with cucumbers, tomatoes, olives, onion, feta and some arugula. When it’s time for lunch, I simply pop the rice in the microwave for 90 seconds and then add my jar of goodies. I get great taste in under two minutes with almost no effort.
