If you need a new and exciting recipe to add to your holiday table, whip up a batch of Maple Sweet Potato Mash. I made some a couple of weeks ago to test ahead of time and it was a huge hit. You don’t need a ton of ingredients or a lot of time for amazing flavor. Plus, it would be great addition to your regular weeknight dinner. It would be a great change of pace from regular baked potatoes and would be amazing with pork, chicken and more!
- 5 medium sweet potatoes (about 2lbs), peeled and cubed
- 3 Tbsp. Country Crock ® Spread
- 3 Tbsp. maple syrup
- 2 Tbsp. orange juice
- ¼ tsp. ground ginger
- Add potatoes to 3-quart saucepan and cover with water.
- Bring to a boil over high heat.
- Reduce heat to low and simmer 20 minutes or until potatoes are very tender; drain.
- Mash potatoes.
- Stir in remaining ingredients until blended.
